A rather tasty meal! I used basil instead of oregano and served it over rice. Will have to make again.

Broccoli Salad I

Reviewed: Feb. 14, 2009
Yums! I substituted raisins for blueberries and I didn't have any sunflower seeds, so I used sesame seeds. Also didn't have green onions so I used scallops. Broccoli never tasted so good.

No-Fuss Rice Pudding

This recipe did not work out for me. The egg separated and the liquid evaporated. Maybe it's just my microwave...

Sweet Irish Bread

Delicious! Wonderful! I didn't have any sour cream so I substituted vanilla yogurt. I didn't have raisins either, so I put in dried blueberries. Sooo good!

Mrs. Sigg's Snickerdoodles

Reviewed: Mar. 30, 2008
This was the first time I have ever made snickerdoodles, too. I made a few alterations to the dough to ensure that the cookies would be moist and chewy - a lot of times snickerdoodles can be crispy. I used 1 cup of butter and omitted the shortening. I melted it and then added the sugar. I subsituted 1/2 cup of white sugar for brown sugar and 1 cup of AP Flour for bread flour. They turned out just like I wanted - nice and chewy with just a little crisp on the outside. Will make again!

Awesome Slow Cooker Pot Roast

Great Pot Roast. Fool proof. I used the leftover sauce: strained it and added some cornstarch and brought it to a boil to make a thicker gravy. Delicious!

Good recipe. Garlic wasn't over-powering. Just like I like it. Very nice.

Candied Carrots

Delicious! I omitted the pepper as well, and I think that next time I will add less butter so the sugar can carmelize better. Definatly a keeper!

Great easy recipe. I added more spices to the dough: 1/4 tsp each of ginger, cinnamon, allspice, and clove. Also 1/4 tsp. vanilla extract. It's a keeper.

I think that I just don't like pumpkin as much as I thought I did. Good idea though.

Decadent Pumpkin Muffins

Reviewed: Oct. 17, 2007
I made some alterations too - some the same: exchange 1 cup of AP flour for wheat flour, left out 1/2 cup sugar, 4 eggs instead of egg whites and extra egg and no water. I also put in 1/4 cup milled flax seed and sprinkled brown sugar on the tops before baking. Excellent breakfast muffin!

Jean's Homemade Chicken Noodle Soup

Reviewed: Oct. 6, 2007
Great soup for cold/flu season. Here are a few changes that I made: added 1 tsp. salt, a dash of cumin, 1/4 cup chopped onion, and 1/2 cup more noodles. I didn't saute the chicken with oil and ginger. Instead I added the ginger slices to the broth and let them cook with the rest of the veggies and took them out just before serving (Like you would a bay leaf.) That way there's no oil. I will definatly make this one again!

Hash Brown Pizza

Reviewed: Feb. 6, 2007
Pretty good. It called for a lot of onion for my taste, so I only put half in. The hash browns do need to cook a bit longer. Mine didn't get crispy. I would make it again.
