Cucumber Sandwiches III

These were a big hit with the bridesmades at my friend's wedding. Once we finished with them, the boys took them over as well! The crisp, watery cucumber really balances out the creaminess of the cheese and the saltiness of the dressing mix.

Chocolate Icing

I added an extra Tbs of cocoa for a really fudgey taste. This worked perfectly to top a marshmallow and crushed grahm cracker mixture to make S'more Bars. It has a very nice fudge like texture.

Ultimate Maple Snickerdoodles

Very subtle maple flavor, which is nice. You can tell there is something "special" or "extra" but it's not like a maple slap in the face. The texture is perfect as well. I'm not the biggest Snickerdoodle fan, but I love these cookies. Thank you for sharing them!

Banana Banana Bread

This is now my one and only banana bread recipe. The extra banana-ness is exactly what I love in banana bread. It is moist, just sweet enough and very good plain.

John's Raspberry Asparagus

As far as simple recipes to dress up asparagus go, this one is definately the best I've found. The tart and sweet of the yogurt really help to bring out the crisp green flavor of the asparagus. I will definately make this again.

Wine Sauce Chicken

This was very rich and tastey. I made this for Valentine's Day, so it was a VERY rare and special occasion for us to indulge like this. I gave it 4 instead of 5 because I don't know if it was worth the calories. "Mmmn" good, but not "ohmygosh" good.

Whole-Wheat Chocolate Chip Cookies

These cookies have a great taste and a very rich texture. I found the recipe as written to be a bit dry, so I added another egg which seemed to work out just right. My cookies still didn't flatten out like normal, but they tasted right and felt right in my mouth, so I'm chalking that up to the WW flour. All in all an awesome recipe for my cookie cravings while watching carbs. Used splenda and splenda brown instead of sugar. Will make again.

Old-Fashioned Chocolate Fudge

I was looking for a recipe like the one my grandma used to make at Christmas, and I think this is the exact one. It's no easy task to get it right, and its definately an arm workout, but worth it for sure. I love the super chocolatey and not-too-sweet flavor of this fudge. It makes me think of Holidays growing up!

Wheat Germ Whole-Wheat Buttermilk Pancakes

These pancakes were light and fluffy as promised. I added some pecans just for texture. Holy moly though, they're filling, so watch out. Very good with sugar free Mrs. Butterworth's syrup!

Amazing Whole Wheat Pizza Crust

OK, so I read all the reviews, and decided to tweak the recipe taking pages from a few of the reviewers. I used all whole wheat flour (3 1/4c) because I'm doing the South Beach diet. I also added 2tbs of Italian Seasoning to the flour mixture, and put everything in my bread machine, using the "whole wheat dough" cycle. I then prebaked the crusts at 500 for 6 minutes, added the toppings and continued baking at 425 for another 6-7 minutes. I was AMAZED at 1.) how much dough there was. Easily enough for 2 thick crusts or 3 thin crusts, and 2.) how much it tastes like regular pizza crust. My husband even said he couldn't tell the difference! I would recommend this to anyone for sure.
