Sausage Crescent Rolls

Not bad. Skipped the egg white and seeds, added pepperoni. Next time may add some pizza sauce, either poured over the top with some mozzarella as a main dish, or to dip with appetizers

Mexican Shepherd's Pie

I layered black beans (can rinsed and drained) and the cheese on top of the corn before the corn muffin. I only used 1 box of corn muffin mix, but 2 are definitely needed for full coverage (if I had another box at home I would have mixed it up--instead I just had corn muffin "blobs" covering the cheese). I also dumped the whole can of tomatoes in (juice and all) and think I should have used less than 3/4 cup water with doing that, since it took forever to evaporate, and I still had some runny casserole in the end. Tasted great, though!

Basil Cream Chicken

I didn't have fresh basil so I used 2 Tbsp dried. Probably could do slightly less next time. I used fat free half and half. The sauce was a little thick, but I stirred it in with egg noodles and spread some over the chicken. It was a hit at our house!

Butternut Squash Soup

I used 4 oz of low fat cream cheese and it was still rich, but great! I didn't use quite as much better as called for. I roasted the squash for about an hour at 350 with some olive oil, garlic powder, and pepper. About 2# squash needed ETA: made with less cream cheese and it was not as good, and pepper really took over. Would stick with my above review.

Connie's Zucchini "Crab" Cakes

I really liked this, as did my husband. He thought it tasted like crab cake, but I only thought it did a little (maybe the green zucchini kept me from truly believing!) I did follow some other reviewers and here's how I did it: used seasoned bread crumbs (some herb, some 3 cheese, and some plain), improvised for Old Bay by following some others' suggestions, and going to McCormicks website to find the ingredients to Old Bay, which fortunately I had almost everything in my cabinet, then coated patties with plain bread crumbs, and baked at 350 for about 10-15 min each side. I did cut my zucchini the night before, but hardly got any water out. My patties were slightly on the dry side (not bad, I just was expecting almost mush based on other reviews!) and held together very well. Don't know how leftovers will be yet, but I am definitely thankful for this recipe to help ease my zucchini burden (we ate this dish tonight with steamed zucchini and had zucchini bread for dessert--lots of zucchini growing in our neighborhood to eat up)!

Zucchini Bread

Great recipe! I followed some ideas on other reviews--I used 1 cup whole wheat flour and 2 cups white, and only 1 1/2 cups sugar, and only added chocolate chips to one loaf. I liked the chocolate one better, but I do have an addiction, so it may not work for everyone!

Classy Chicken

My husband and I both liked this alot! I changed some things, mostly based on what I had on hand. I used whole wheat flour, only 1 tbsp margarine, regular mustard, and LOTS of fresh tomatoes and zucchini (garden was good to us). I expected more sauce to have to pour over pasta, but it was easy to make at the end with extra broth and wine. The leftovers were good, also, and it was great to have a whole meal in one container (we had leftover pasta and like I said, tons of zucchini that we mixed up in sauce and stored away with the chicken).

Slow Cooker Sweet and Tangy Chicken

I cut this recipe in half, given that some reviews were not great. Yet it sounded so good I wanted to try for myself! I followed other users advice--used sweet BBQ sauce and added carrots, and also added some cornstarch for thickening in the last 30 minutes, and only cooked it for about 7 hours. It was OK. I did have leftovers and served those with soy sauce, which I think made it taste better, but nothing I'll run out to try again.

Caramel Apple Pork Chops

This taste reminded me of how my mom used to bake pork chops--with applesauce and cinnamon on top. I must admit that the applesauce route is quicker, but this recipe here was also delicious. I'm excited to eat the leftovers, when the great apple flavor has really sunk in!

Applesauce

I used half the amount of recommended sugar, and it was still really sweet. But it was great otherwise. When I make it again, I will use less sugar. And since this was my first applesauce attempt, I appreciated the tip from a previous review to drain the apples before blending!

Pineapple Upside-Down Cake II

This makes a pretty good cake. I am used to pineapple upside down cake having a yellow cake, but this is a little different. Definitely recommend heating leftover slices for about 20 sec on defrost in microwave before eating--it tastes much better warm.

Tuna Cheese Mac

I used the shredded cheddar and the sauce was clumpy. I tried it again with Velveeta, which was very rich, but definitely made a better sauce. ABout 1/2-3/4lb Velveeta instead of cheddar is my recommendation. Not a bad recipe overall.

Sauce Rosee

I used 1 lb of pasta and only 5 tbsp of oil and it was perfect! Definitely a "make again"!! ETA: Made another time with 4 T oil and fat free half and half. It was runny so I definitely need to add some cornstarch to thicken. Added in some cooked shrimp and the whole family loved it!
