Cheesy Ranch Potato Bake

I heavily buttered my dish, then melted about 1 tbsp butter and mixed in the seasoning. It made a paste that I stirred into the potatoes. I used fat free cheddar (what I had at home) and fat free ranch. Hubs and I liked it, kids weren't thrilled, but they're kids. The chili powder definitely gave it a different taste, and I think would go best with a grilled meal, as stated above.

Easy Pleasy Mac N Cheesy - US Navy Style

I added some garlic and onion powder, and pepper. I didn't do any topping, because I'm not really a topping on casserole kind of girl. This was a typical velveeta dish. Good, but I don't make a habit of having velveeta around the house. I did add tuna and some frozen peas to make it more of a tuna mac.

Sherry Apple Pork Chops

This was liked by all , but wasn't one that I was begged to make again. If/when I make it again, I will try to thicken up the juice with some cornstarch and make a sauce for the chops.

Chicken and Apple Curry

My husband and I liked this. I used 1.5 tbsp of curry, and cubed the chx, then sprinkled some pepper and a very imprecise homemade version of garam masala over it. There was more than enough sauce for 6 servings of rice.

Gourmet Caramel Apples

I just used some dark chocolate sweet baking squares I had leftover for the top w/o shortening, then topped with finely crushed pecans. Worked well and was yummy!

Baked Potato Soup V

I used 12 potatoes since that's what was in the bag. I left the skins on, and just cut in large chunks then used my immersion blender to make creamier. I added 1 cup chx broth to thin since I added extra potatoes. I used 2 c whole and 4 c skim milk. This was fine. The family enjoyed it, but it was not a "top 10."

Garlic Cheddar Chicken

We all liked this. Would make less breading next time. I used some plain and some garlic herb bread crumbs. I didn't have fresh parmesan so I used a little of the canned variety. Left out salt but it was still a little salty.

Fabulous Zucchini Grinders

QUick and not too unhealthy. I toasted the bread, then melted cheese, then put zucchini mix on. Added some garlic powder to the mix as well

Cheesy Ham and Hash Brown Casserole

Used 1 condensed cheddar and 1 cream of potato soup. I also used pork sausage instead of bacon. It was good. A usual comfort food creamy casserole. The whole family liked.

We added mint extract (less than 1 tbsp and it was a little heavy) and choc chips. Was more of a shake, even in our ice cream maker, but good. Used Whole milk, but fat free half and half

Asparagus, Chicken, and Pecan Pasta

I loved this! I used 1 tbsp dried basil instead of fresh, and the spinach chx sausage from Sam's as another reviewer suggested. I wanted to use pecans, but turns out the "pecans" I had in the pantry were really walnuts, so I just left out nuts. It didn't matter. The only change I would make is less ground pepper. My 5 yr old did not care for it, but my 17 month old had 3 helpings.

Rosemary Ranch Chicken Kabobs

I really liked these! Next time I will use much less oil. I left out salt as always. 1 tsp dried rosemary, and about 1 tsp of sugar. It made tons of marinade, so I dumped in some squash. I think it would be excellent on roasted potatoes, too. ETA: Made a second time with 1/2 the oil--worked fine. Dumped about 2/3 of marinade on chicken, and rest on 3 medium potatoes chunked and it was great roasted about 450 for 40 min.
