Chilled Vegetable Salad

This was OK. Not sure I would make again. I was in search of a dish to take to 4th of July BBQ that wouldn't melt or contain mayo to spoil and this fit the bill, but was not a favorite. I did grill up the leftovers and it was OK, too.

Tomato-Dill Shrimp Stew

I used 2 cans of tomatoes instead of fresh. This was pretty good. Next time, I will make some rice or quinoa to serve with.

Spinach Tomato Tortellini

We all liked this. I added some cooked shrimp at the end. I used skim milk and cornstarch, but as expected, it did not thicken up as much as intended. Nothing a little garlic bread soaker-upper couldn't fix, but next time I will either use FF half and half, or just use less than 1.5 cups milk

Slow Cooker Mexican Beef Stew

I didn't brown the meat, just dumped it in the crock with a little flour. I used fire roasted tomatoes. The family liked it!

Chef John's Sausage & Shrimp Jambalaya

My husband and I liked this. I used turkey sausage, so didn't need to cook it ahead of time. I used about 1.5 TBSP of paprika and 1/8 tsp of cayenne to keep it less spicy for the kids and me. I used a whole can of tomatoes, and left our celery. I omit salt (as always) but did sprinkle some celery salt. I had about 5 c of chx stock, so I went ahead and added 1.5 c of rice. I could have added more. I tossed the sausage in with the shrimp at the end. You do definitely have to boil the rice before turning down!

Steak House Au Gratin Potatoes

I cubed potatoes really small, placed in a 9x13 pan, then microwaved on high for 8 min before doing the rest of the recipe. I mixed most of the cheddar in with the potatoes before microwaving. It was well received! I also used about 50% fat free half and half and 50% skim milk for the milk and cream mixture

Pork Roast With The World's Best Pork Loin Rub

I cut way back on the peppers, because we do not like hot, and it was still spicy. The meat was very tender, though. I think if I make again, I will maybe eliminate the red peppers, and use less of the black pepper than I already did. I also won't make the mistake of sprinkling the leftover rub on the potatoes and carrots I cooked with the pork (I had quartered the recipe, so there wasn't much left, but whoa on the spice!)

Apple-Stuffed Acorn Squash

I used regular raisins and a red delicious apple since that is what I had. I microwaved the cut squash with some water in the baking dish for about 15 min, and was able to scoop much of the flesh out to mix in with the rest. My husband thought this tasted like apple pie. I thought it was good enough to use again if our neighbor presents us with another acorn squash(like in this case), but I don't think I would seek it out.

Cream Corn Like No Other

I used fat free half and half in place of cream and milk, and used parm cheese from the can. It was still well liked! I did add some extra flour to thicken (used a little whole wheat after the initial white)

Black Bean and Salsa Soup

So easy, tasty, and healthy! I used 3 cans of beans, rinsed and drained. Reserved 1 can. Added 1 tsp no sodium chx bouillon and 2 cups water. Added some chili powder, garlic powder, and lime juice. Used the immersion blender, then added the last can of beans and some frozen corn. In just a few min over med-high heat, dinner was ready!

Hot Dog Noodle Casserole

I used canned spinach, added some garlic, minced onion, and Worsch sauce, subbed sour cream with greek yogurt, and added some mozz cheese (8 oz). Used smoked turkey sausage instead of hot dogs (just using what I had). It was fine. Nothing that anyone will be excited for me ot make again, but worked OK for dinner.

Oven Roasted Potatoes

Made as written, except left our salt, and cooked at 375 for an hour to accommodate the pie I was also making. Used russet potatoes and ate them like potato wedges with ketchup. Yum!

Sweet-and-Sour Coleslaw

I just used cabbage, bell pepper, and corn, and it was good. Used 1/4 c sugar and it was plenty sweet. I chopped the cabbage but my husband thought I should have shredded it. I kind of liked it chopped.

Savory Sweet Potato Fries

I used 2 tsp dried rosemary, a little pepper along with some garlic and onion powder. They tasted OK, but were mushy on some, undercooked crunchy on some, burned on others, and perfect on some. I used a stoneware pan. I would make again, but try to figure out exactly what made the perfect ones perfect! I cut them all about the same size

Mexican Baked Fish

I used tilapia. Sprinkled about a tbsp of taco seasoning over it and baked for about 5-10 min before dumping on the rest for about 10 min. I used garden salsa sun chips instead of corn chips. My avocado was not ripe, so I did not like it tonight, but not the recipe's fault. I would try it again with a riper avocado, or some guacamole. Maybe add some corn and black beans next time.

Grilled Fish Tacos with Chipotle-Lime Dressing

This made for a nice light summer meal. I used plain greek yogurt instead of sour cream, and left out the adobe sauce. Topped with shredded cabbage, monterey jack cheese, and tomatoes. I think my cabbage was shredded too fine, as I thought the taco needed more crunch. Kids didn't care for it.

Strawberry Cheesecake French Toast

We liked this recipe, but I wasn't as overwhelmed as I thought I would be. I also had leftover milk/egg mixture and cream cheese filling. Made some extra toasts, then scrambled eggs. The filling oozed out and made it not look too pretty. My strawberry sauce didn't thicken much--I would bring to full boil next time. I used our whole wheat bread that we always have. I am sure I could tweak this and with some practice it would be awesome, but we just don't eat unhealthy all that often. I made this to use up a bulk of strawberries from our garden, and it did the trick. Thanks for submitting! Oh, I originally forgot the confection's sugar--it really made a difference (improvement) when I added. I left off whipped cream.
