Tortellini Bacon Broccoli Salad

Are you kidding me? This was freakin' awesome! I used turkey bacon and about half a bottle of the coleslaw dressing - everyone loved it at our party. I think the right coleslaw dressing makes a difference too.

Southern Pulled Pork

This was great. I didn't have Cajun seasoning, so I used Tony Chachere's Creole seasoning (this should be a staple in everyone's home) instead, and it was fine. The browning of the pork really locks in the flavors. We didn't put anything else on it, it was yummy.

Blueberry Crumb Bars

YUMMY!! I added lemon juice and cinnamon to the crust and blueberries. The juice made the sugar stick to the blueberries.

Freezer Pumpkin Pie

Yummy! Who needs to wait for October for pumpkin ice cream? I used slow churned low fat ice cream and made this a better-for-you dessert. Next time I'm not adding the brown sugar. Would be good with whip cream or gingersnaps on top instead of making a pie.

Raisin Apple Muffins

Didn't do 5 stars because it needs some minor tweaks. I did 1 cup white flour and 1/2 cup wheat, in addition to everyone's 1 extra teaspoon of cinnamon. Everyone in the office liked them. Good hot or cold, quick and easy - will make again!

Banana Blueberry Muffins

Good. I followed others advice by adding a touch more bananas. There were plenty of blueberries, good overall for it's health content; best when topped with a touch of butter! I also think a cinnamon/sugar crunchy topping would be good. Will make again.

Pumpkin Corn Bread

Yuumy! Moist and dense. We used applesauce, no oil, and only a 1/4 quarter cup brown sugar to serve with our chili. Next time I'll keep the full sugar and add the pumpkin pie spice with some crumble topping for a sweeter option.

Oh My Gosh Muffins

I tried to make the muffins healther so here's what I did: sugar = brown sugar, 3 bananas (1 1/2 cups), flour = wheat flour. Next time I'll use less butter and maybe applesauce instead as well as dark chocolate chips. I like my version a lot, not quite "oh my gosh" but tasty!

Pumpkin-Apple Muffins with Streusel Topping

Very good. Everyone at the office liked it. To make it healthy I substituted apple sauce for the oil, used only used one cup of sugar and made it with whole wheat flour. It was a bit dense. Next time I’ll add some nutmeg and cloves.
