Garlic Chicken Fried Brown Rice

I thought this was a quick, easy, and healthy filling dinner. I substituted fresh green beans for the frozen peas and enjoyed having all fresh vegetables. Next time I will definitely experiment with adding more seasoning... otherwise it was great!

Slow Cooker Chicken Stroganoff

I liked this, but the chicken got a little overcooked/dry for my taste. Next time I'll add a little white wine at the beginning per others' suggestions and maybe cut a little of the cream cheese. Still a really good, easy recipe.

One Pot Pasta

This was delicious and super easy. I used 8oz of canned mushrooms and 1 cup of marinara sauce instead of plain tomato sauce (just because it's what I had on hand). I'm definitely adding this to our regular rotation and think there are lots of possibilities to customize it -- add sausage next time, maybe?

Best Ever Banana Bread

Yum, yum, yum. I can't stand whole bananas, but my roommate had two that were getting brown and I didn't want her to have to toss them, so I figured I'd find an easy banana bread recipe to use them in. This came out really moist and delicious. I followed a few other people's advice and added 1 tsp of vanilla and 1/2 tsp of cinnamon, as well as subbing 1/2 cup of brown sugar. I also omitted the nuts, but it's great without them.

Red, White and Blue Burgers

I thought these were absolutely delicious! I typically don't like burgers, or much beef at all, but the combination of flavors these had was great. I only used about 1 1/4 lbs of beef and it made five burgers -- two of them I cooked on a George Foreman grill and the other three on a broiler pan in the oven, just to see which worked best. The broiled batch were more flavorful, but maybe that's because all the fat ran out of the other ones. :)

Champagne Punch I

Absolutely delicious! I made two batches of this for my mom's retirement party (about 30-40 people) and all of it was gone before the party ended. We couldn't find raspberry sherbet and used rainbow instead, which still turned out great. It's a really nice balance of flavors between the ingredients to make it sweet, but not overly so.

Ranch Ham Roll-Ups

These are absolutely addictive and easy to make in large quantities. I chopped the onion in a food processor before adding it to the cream cheese mixture, and also added shredded cheddar on top of the ham before rolling up the tortilla. I found that the key to keeping the pinwheels from unrolling is to be sure to spread the cream cheese all the way to the outer edges so it acts as a glue. :)

Pizza Pinwheels

I quadrupled the recipe and made a TON of these for my mom's retirement party -- glad I did, because they went fast! Definitely a hit with adults as well as kids. I followed other users' suggestions and chopped the pepperoni in a food processor before layering on the cheese. One key to keeping them from falling apart while baking was to press the perforated edges of the triangles together before adding toppings, and then press and seal the edges of the roll before slicing them.

Milk Chocolate Popcorn

This was really easy and delicious! The peanuts were a great addition. I used two bags of tender white microwave popcorn and baked it in two glass Pyrex dishes. I made this for my mom's retirement party (served in small dishes alongside party mix) and got tons of compliments. Definitely a keeper!

Twice Baked Potatoes II

Super easy and a good basic recipe that can be modified according to individual tastes (with chives, garlic, bacon, etc). I didn't really measure the quantities of sour cream, butter, or cheese... just tasted as I went. I also brushed the potato skins with olive oil and salt before baking. Yum!

The Most Incredible Garlic Bread

I used a loaf of soft Italian bread instead of French bread and it turned out perfect under the broiler. I also didn't have oregano or parsley on hand, so I substituted with a teaspoon of Italian seasoning. Like others said, the oil didn't mix completely with the cream cheese, and I was a little concerned about drizzling MORE oil on top, but everything combined well in the oven. Definitely as good or better than frozen garlic bread!

Men Love This Steak

This had so much flavor and was super easy! It was my first time making steak, and things could not have turned out better. I cooked the steak in a broiler pan in the oven, which made things even faster. What a great combination of flavors from the blue cheese and the sauce that the veggies sauteed in! I will definitely make it again.

Quick and Easy Chicken and Rice

I think this is a great base recipe that can be customized in almost endless ways. I made it a little lighter by using fat-free milk, reduced-fat cheddar, light spread, and brown rice. I also used canned mushrooms that I diced and sauted beforehand along with onion and celery. I added a handful or two green peas and used two packs of pre-cooked diced Tyson chicken. Finally, I topped everything with breadcrumbs before baking. It came out really moist and flavorful, and I look forward to making it again!

Cream Cheese Pound Cake III

I am giving this three stars because my family enjoyed it much more than I did. I found it to be a little bland, and I struggled a lot with the baking time. At the one hour mark, I noticed that the cake had cracked in a circle around the middle of the pan, and although the center was done, the batter inside the crack was still raw. I baked it for twenty more minutes, and then in five minute increments until it finally firmed up around 1 hour 45 minutes. The interior texture ended up varying from drier/denser to more moist. Overall, not what I was hoping for.

Jennie's Heavenly Slow Cooker Chicken

This was so delicious and perfect for a cold winter night! I substituted half a can (about 1 cup) of chicken broth for the wine, just because I didn't have any on hand, and used regular cream of mushroom soup instead of golden mushroom. We left it on low all day, and the chicken came out tender and wonderful. I'll definitely make this again!
