Zippy Burgers

This did not wpork for me. I added an egg and beer and some extra herbs and some parmesean and bread crumbs as others suggested. Still fell apart.

Springtime Strawberry Bars

I searched endlessly online and on this site for a good strawberry bar recipe. This was hard to find. This recipe is fabulous. I never make anything exactly like the recipe. It was how I was taught! That said, my changes were minor. I did not have almonds, so I added rolled oats. Super good idea! I added lemon juice to the batter (about 1.5 tsp.) I always think it's a good idea to beat to holy heck outta the butter/sugar mix, and this worked out well for this recipe. I did use 1 cup of white sugar and a half cup of brown sugar. When it had been in the oven for about 15 or so minutes I took a spatula and moved all the strawberry and topping around and it looked beautiful when it came out. I did add a lemon icing to accent the flavor. This was the closest thing to one of those Entenmans coffee cakes I have ever made. I won't admit how much of it I ate last night. I am impressed with this recipe. So many options. Thanks, Marna. I will make this a regular item in my kitchen with different preserves. So so so good.

Banana Banana Bread

This has been my go to banana bread recipe for years now. Of course, I have tweaked it to my own taste, but that is because I never know how many bananas I will have on hand. If I don't have enough bananas, I add some applesauce. I whip the holy heck outta the butter/sugar/vanilla/eggs and then fold in the remaining ingredients, including the bananas. I always double the recipe. I want to make this very important point. Your final product should be fairly sticky. Sometimes I add a cinnamon/sugar/butter topping, not always. I always check it at 45 minutes and if it's too brown on top for my liking i put some foil on it. I have to admit i use a mixture of old bananas from the freezer and ones from the counter top that are just too far gone to eat for my taste. And again, I don't use the mixer on the bananas, I mash those just a little in a different bowl, I add vanilla to the wet mixture. This last time I added chia seeds and cardamom. And the sugar/cinnamon/butter topping! You cannot go wrong with this recipe. I have made it easily a few dozen times. It's always been delicious. Enjoy! And thank you, Shelley!

Vegetable Filo Pie

Made this the other night with sweet potatoes, orange bell peppers, mushrooms, zucchini and onion. It was good! I lightly steamed the veggies but withheld the onion. Next time I will withhold the mushrooms from steaming, too. They were a little chewy in the finished product. I added fresh dill and it said "to taste" and I didn't add enough. I don't see the point of adding the one egg. I am thinking this recipe will be delicious with fresh tarragon instead of dill! Overall, I enjoyed this recipe and I can see how I can accommodate it to whatever my taste buds need. Thanks for helping me use up my Filo dough!

Good Old Fashioned Pancakes

I made these for my daughter this morning. She's 5. She thought they tasted like cookies. I disagree. I thought this recipe was fantastic! I did sub unsweetened soy milk for the milk and used Ener-G egg replacer for the eggs. I loved it loved it loved it. I think I did add a touch more sugar than it asked for though. I will definitely make this again. I had to add a touch of water right before cooking because the batter seemed a tad too thick. Delicious! Thanks!

Delicious Raspberry Oatmeal Cookie Bars

I liked this recipe. But it was missing something. Maybe next time I'll play with the spices. I did bake the bottom layer for about 5 minutes before adding the jam. Worked well for me. I'll make it again but will need to tweak it to add a bit more flavor.

Apple Pie II

I have a huge sweet tooth and this pie was way too sweet for me. I should have listened to some of the other reviewers and cut down to 1/4 cup sugar in each application. I did add lemon juice, cinnamon and a tad nutmeg. The flavor was there. I should have also not cooked the apples as long as I did, and I thought I was taking them off the heat too soon as it was. All that said, I thoroughly enjoyed this pie. I will make it again and use the knowledge I learned. It'll be worth it, I'm positive.

Vegan Brownies

Okay, where is the cook? I need to kiss her! OMG these are SO SO good. I saw this recipe and actually thought they would not turn out okay. I used vanilla soy milk instead of water, applesauce instead of oil and used black cocoa AND regular cocoa and added some semi sweet chips on the top. MAN alive this is one amazing recipe. My brownies are a little cakey, but I must say I've never met a cake OR a brownie I didn't like so that is fine with me. They are decadent, rich, and fantastic. Will make over and over. Now, if I could just figure out how to cut the sugar a little I'd be happier.

The sauce is just great. I think I'll try it on some other cuts of meat! I am new to using boneless rib meat and mine came out a little tough. I love the idea of it so much I am going to try it again!

Zucchini Bread IV

I liked this recipe, but, I think I was expecting more intense zucchini flavor. I did mess around and use whole wheat flour (which I sifted) and subbed applesauce for the oil. I also toasted the walnuts. The bread was very moist and it goes down easy but it just tastes like bread. Maybe I should stick to banana bread! I just happpend to have extra zucchini on hand. Good recipe.
