Nanaimo Bars I

I have made this recipe several times and love it. I generally don't like Nanaimo Bars because they are too sweet and rich but these are perfect. I leave out the nuts. They are not traditional to this recipe.

Cream of Tomato Soup

This is the same recipe I learned in grade 7 home-ec 30 years ago. I still made it from the original recipe card. Easy to make changes depending on your mood...garlic, fresh tomato, etc.

Caramel Oatmeal Pudding Cookies

This is the recipe for the cookies my friends call "crack" cookies as you can't stop eating them. VERY IMPORTANT-IT IS 3 1/2 C OATMEAL. Let the mixture stand 15 minutes before spooning out. Cool in fridge at least an hour.

Cranberry Muffins

Made them exactly as the recipe states except doubled the cranberries. The batter is very stiff but the muffins turned out perfectly. Made 12 muffins as stated.

Made this exactly as posted. I was sceptical putting it together-the sour cream/cheese layer looked strange. When baked it was wonderful. Will make again, which I rarely ever do!

Peanut Butter Vegetable Chicken Soup

Made this last night. The only change I made was in adding larger quantities of veggies and a dash of cayenne. Absolutely love the taste. DH wasn't sure when I said we were having PB chicken soup but loved it too!

Asian Chicken Salad

I have made this dozens of times. The only thing I change is using only a handful of the noodles. On hot summer nights, I use a deli chicken and as always, this salad is incredible.

Ham 'N' Cheese Pie

Made 1/2 recipe exactly as listed for just the two of us. Absolutely delicious! Could have eaten the whole pie. Would make a great brunch dish, cooled a bit and sliced in wedges.

Suki's Spinach and Feta Pasta

Made 1/2 the pasta for 2 with total amount of the remaining ingredients. Added some raw shrimp at the end. This is absolutely delicious. I did add quite a bit less olive oil to keep it a bit lower in calories. Will make again soon.

Hamburger Steak with Onions and Gravy

I have made this recipe several times. I use lean beef and am probably heavy handed with the seasoning. The only change I make is to add sliced mushrooms. A great comfort food served over mashed potatoes.

Candied Chicken Breasts

Absolutely delicious prepared as per the recipe except used the juice from the can of pineapple. Not an everyday thing because it's quite sweet, but definately went into the "make again" binder. Also, I lined the pan with non-stick foil so clean-up was a breeze.

Best Chicken Ever

A blast from the past. My mother used to make this when I was a kid. She used chicken pieces and mayo instead of sour cream, but boy was it good. This is also very good, and much healthier using the chicken breasts and sour cream.

Pork Tenderloin alla Napoli

Easy and incredibly delicious. The only thing I would do differently next time is double the ingredients except the pork. Will make again soon. **I made this again last night (and I don't make many things twice) when I was short on time. Cut the pork into bite sized pieces and sauteed in the olive oil. Added the rest of the ingredients and simmered for a few minutes until the tomatoes cooked. Forgot the cream altogether and it was still fabulous.

Ham 'n' Egg Casserole

Made this the night before for dinner the next day. Only changes were to cut the butter a bit and stir in grated old cheddar instead of the processed, as that was what I had. Absolutely delicious. Great cold, too.

No Time to Cook Chicken

This tasted really good, considering it ending up cooking 10 hours. I am just not 100% sold on the fall-apart texture of the chicken. The sauce is delicious. I am going to try this again, cooking just until the chicken is done. Added a large onion at the beginning. Served over egg noodles.
