Extreme Chocolate Cake

Cake was outstanding! Made 4 8" layers and baked 20 minutes. As per other reviews I made the cake the night before. I used this frosting and it was good but maybe a little sweet. I make a better buttercream from an old family recipe.

Banana Muffins I

Made a double batch with no change except adding 1 t cinnamon and a dash of nutmeg. They were so good you don't miss the fat at all. Will make again and again experimenting with adding raisins, chocolate chips, etc.

Sweet and Sour Pork I

Great recipe. Made as directed except subbed pineapple juice for the plum sauce and water. Next time I would use pineapple tidbits instead of crushed, but that is just my preference. Will make again.

Blender Hollandaise Sauce

Made Hollandaise this way for years, using a food processor. Butter must be nearly boiling to thicken the sauce. Could eat this right out of the processor bowl.

Chicken Florentine Casserole

Used the ingredients as listed, but mixed as per other reviews. I used cooked turkey I had in the freezer and 2 pkgs of frozen chopped spinach, squeezed dry. I haven't heard raves like this for a while.

Nova Scotia Blueberry Cream Cake

Followed the recipe,. except mixed the blueberries in with the sour cream mix. This is the perfect dessert, sweet but not too sweet, rich but not too rich. For those concerned about the apparent problem with the jiggly top, I cooked this on the middle rack for 65 minutes. When I removed it from the oven, the edge was set, but not the rest. Once it chilled, it was all firm. Don't be afraid, try this. You will be glad you did.

No Time to Cook Chicken

This tasted really good, considering it ending up cooking 10 hours. I am just not 100% sold on the fall-apart texture of the chicken. The sauce is delicious. I am going to try this again, cooking just until the chicken is done. Added a large onion at the beginning. Served over egg noodles.

Ham 'n' Egg Casserole

Made this the night before for dinner the next day. Only changes were to cut the butter a bit and stir in grated old cheddar instead of the processed, as that was what I had. Absolutely delicious. Great cold, too.

Pork Tenderloin alla Napoli

Easy and incredibly delicious. The only thing I would do differently next time is double the ingredients except the pork. Will make again soon. **I made this again last night (and I don't make many things twice) when I was short on time. Cut the pork into bite sized pieces and sauteed in the olive oil. Added the rest of the ingredients and simmered for a few minutes until the tomatoes cooked. Forgot the cream altogether and it was still fabulous.
