Happy New Year!
About this Cook
My husband and I work a lot, particularly late nights. We don't have children, but understand the importance of a nice, balanced, home-cooked meal at the dinner table. It is difficult to do, but we make it happen. My husband is a much better cook than I am.
My favorite things to cook
Anything on the grill...
My favorite family cooking traditions
I came from a long line of wonderful cooks. My mother and grandmothers make the best comfort food in the world. I ignored the kitchen and hit the books instead though. I wish that I had taken the time to learn more from them, but I am trying to catch up now.
My cooking triumphs
I made a ton of great food for a New Year's party that we had. It was all delicious, but a great deal of work.
My cooking tragedies
My husband looks forward to his Aunt's Red Velvet cake for Christmas every year. She decided not to make it a couple of years ago, so I tried it a few days later to make him feel better. It was hard, dry, and fell over. He still tried a slice to make me feel better.

Beef Nacho Casserole
My husband and I just tried this recipe. It is really good and super easy. I followed some of the suggestions and used 3/4 cup sour cream instead of mayonnaise, 1 packet of taco seasoning instead of chili powder, and a packet of shredded Mexican cheeses instead of colby cheese. It was really good and only took us about 30 minutes to make.

Chicken Enchiladas V
They were okay. I would probably try something a little different next time.

Awesome Slow Cooker Pot Roast
This turned out very well. It was very tender and super easy. I used onion flakes instead of the onion soup mix. I did not find that it made a good gravy though.
