Party Pinwheels

I thought that these tasted wonderful, however they didn't really move off of the plate at my recent party. A few of my close girlfriends commented that the black olives in them made them look unappealing since they don't like black olives. And really once I thought about it the big black specks didn't look too fabulous. So, I will try these again but omit the black olives and maybe add in some shredded carrots, or yellow peppers for even more color.

Double Tomato Bruschetta

This was hands down the best bruschetta that I have ever had! It was so simple to make but the results were amazing. I made the topping about 4 hours before a party I was hosting and then right before my guests arrived I spooned the topping onto the bread, added some cheese, and popped them into a 350 degree oven for a few minutes just to melt the cheese. They were all gone within 10 minutes of putting them on the tray and everyone asked for the recipe. This is a very simple appetizer that tastes and looks very elegant! A great addition to your next party!

Basil Parmesan Spread

WOW!! First of all, I couldn't find sundried tomato paste so i just took some sundried tomatos that were packed in oil and I ran them through the food processor until they turned into a paste consistency. I also made this 24 hours in advance and it was WONDERFUL! All of my guests raved about it, and it was so simple to prepare. This would be perfect for Christmas with the bright green and red interior. Also, since the flavors are so concentrated you don't need a lot of the spread for each cracker so it really goes a long way. This is a wonderful party appetizer because you can make it so far in advance and then all you have to do before the party is put it on a plate and open a box of crackers.

Spinach Saute

This really couldn't have been any easier to make and a great way to use up lots of extra fresh spinach since it cooks down a lot. I added some garlic and it really wasn't necessary at all. The lemon juice made it taste really bright and clean, and reduced fat cream cheese made it taste indulgent. I served it with brown rice and grilled chicken. I had enough extra sauce that it tasted great over the rice. This isn't a really pretty side dish, but a completely delicious one to accompany a super quick mid-week meal. From pulling ingredients out of the refrigerator to sitting down to eat this was done in under 15 minutes including grilling the chicken.

Baked Zucchini Chips

I truely can't rave enough about how delicious, easy, and healthy these were!!! I was a little concerned that this was going to be labor intensive but it only took about 10 minutes to prepare. I just sliced the zucchini in rounds, and then I dunked them in Egg Beaters to save on calories and for the convenience, and then dunked them in the bread crumb mixture. I used seasoned bread crumbs and added extra garlic powder since my family are garlic lovers. And just popped them on a cookie sheet sprayed with a little Pam! After 7 minutes in the oven, I flipped them around with a spatula. Just as a side note, you don't have to be careful flipping them around, they stay together pretty well. Then put them back in the oven for another 10 minutes. I served them with both marinara and ranch dressing on the side. I made 2 full cookie sheets worth of these and they were scarfed down SO quickly!! I had men that are not at all health concsious raving about them and their wives begging for the recipe. I am really making an effort to lose weight, I'm down 20 pounds, and recipes like this that are delicious and not obviously "health food", make entertaining and hosting really fun for me again. These really do need to be served right out of the oven, I think you could prep them ahead of time to the point of the cookie sheet and then pop them in the oven when company came over. Cabbage on the Grill

Zesty Tomato Soup for One

Ridiculously easy, and you would never be able to tell!! I doubled the recipe and it came out to exactly 2 bowls of soup. I just put the onion, tomato and V8 in my food processor for about 30 seconds, and then heated it on the stove for about 5 minutes. Afterwards I realized I should have just dumped it into bowls and put it in the microwave for a minute or two to make it even easier and less mess. I can't get over the fact that I can make FRESH tomato soup in under 5 minutes from start to finish! You could add other ingredients to modify it such as some fresh basil, more garlic, a little mascarpone cheese would taste great too. It was much better than any canned or prepared tomato soup I have bought from the grocery store, and I loved that the consistency was thick just from all the raw vegetables in there. Great recipe!! Surprise Banana Cake

I added one extra banana since mine were pretty small and followed the recipe exactly other than that and it came out delicious!! It was so moist, light, and fluffy it was perfect. I am a horrible baker, nothing I bake ever seems to come out correctly but this was so easy and tasted great. I personally don't like frosting and this cake definitely didn't need any, it was sweet enough for my nieces and nephews (ages 1-10) to gobble it up for dessert and beg for seconds, but not so sweet that it was too much for all the adults. This literally was gone in under 10 minutes, I can't rave enough about it. If you have some really ripe bananas this is a great way to use them up!!

Soy Garlic Steak

Really outstanding marinade!! It seriously took me about 2 minutes start to finish to get this prepped and then just 5 minutes on the grill, and it tasted fantastic. I added a little more soy sauce and a little less vegetable oil. Also, once the steak went on the grill my husband boiled the remaining marinade in a saucepan, added a tiny bit of cornstarch, and made a fabulous sauce to dip the meat in!!

Roasted Garlic Cauliflower

This was delicious! I made a couple of changes that made it a little healthier, and this is definitely making it into my rotation of dinners. First of all, I only added less than 1/4 cup of parmesan and a little less oil and I didn't grease the pan. I also ommitted all of the salt. Also, I just mixed it all together before I put it into the oven covered and stirred it once during cooking. This made it super simple and the taste was wonderful. I have also made this when you add the cheese and parsley on top at the end and broil it and it was good but it didn't reheat well the next day. Also, for the calorie and sodium difference I would much rather do it my way. This tastes very indulgent without a lot of calories, almost like garlic mashed potatoes!

Roquefort Grapes

Beyond easy to make and it really makes you look like a pro! Everyone that tried these (that like Bleu Cheese) oh, I used Bleu instead of Roquefort since to be honest it is cheaper, absolutely adored them. They are great to add to a cheese platter or just put in a pretty bowl to snack on with cocktails. They keep in the refrigerator very well too. They were still good after almost a week.

Gail's Seven Layer Salad

Absolutely delicious!! It seriously took me 5 minutes to make and it was SO good!! I just used the pinto beans straight from the can after I drained and rinsed them and it was delicious. I didn't use as much dressing as it called for, I just drizzled it over the top. Oh, and for the chips we used pepper jack Doritos. It was SO good!! Really this is one of those things that I will make all the time with burgers, chicken, etc. It would be perfect for a summer bbq.

Cake Mix Cookies VIII

Yes, they were super easy to make but they weren't even edible. They were SO grainy. I hate to say it but they really tasted like you just mixed butter, cake mix, and eggs together if that makes any sense. It was a big dissapointment since they were so easy to make!!

Momma OB's Chicken Chili

Overall this was a satisfying and very healthy meal! It really couldn't have been any easier to prepare. The only changes I made were: I used chicken stock instead of water since I had some to use up, I added a little red wine, added one minced habanero pepper w/out the seeds, and after it was done cooking I was a little dissapointed since it looked more like a soup with chunks of chicken in it so I shredded the chicken and it looked more like a traditional chili. The chicken was so soft it literally just fell apart when I smooshed it with the spoon I was using to stir it. It is a very hearty and healthy meal!! I served it with sour cream, cheese, and biscuits.

Adrienne's Cucumber Salad

This salad tasted like summer! It does make a huge amount of liquid with it though, I used 5 large cucumbers and I had to pour some liquid away after I added it to the cucumbers. Just a perfect salad for a bbq, especially since it doesn't have to stay as cold as most salads since it isn't dairy based. It is much fresher and lighter than most salads, but still very flavorful. It would go great with any bbq meal.
