About this Cook
As a Father and husband that enjoys to feed my family, I love being in the kitchen which is the center of our daily activity. My wife and I share in planning, prepping, cooking and cleaning. (At least I try to do the cooking & she cleans up behind me!) I enjoy finding new ideas on this site, but its never enough to follow a recipe, I've always got to do something to it to make it my own. We have a busy schedule (like most families) and we tend to plan our meals to save time. The recipes and reviews on this site, help us to make the most out of the time we are all together and makes dinner time exciting!!
My favorite things to cook
I really enjoy baking. Cookies, Cakes, cupcakes, & cinnamon rolls. The Crockpot is a big tool used, since we have such a busy schedule, so during the week, we've got to do something to make dinner easier! Either the whole meal is in there, one of the yummy side dishes, or just the main course. I really love new dishes, and thankfully, my family enjoys trying new things and trust me! My only problem is remembering exactly what I did when they want me to recreate a meal. Sometimes I jot notes down on my recipes, other times I just wing it!
My favorite family cooking traditions
Simple things like Grandma's Rice Crispie Treats, and chocolate chip cookies are always favorites, but we also like to try new desserts any chance we get. Holiday's seem to be the time for wild experimentation and thankfully leftovers are a welcomed site for us, if only our fridge can handle it!!
My cooking triumphs
POT-LUCKS!!! They are my favorite! Give me a theme, and I will find something that I KNOW will not be brought by anyone else. And usually my dish is the first one gone!! That's the best compliment!!
My cooking tragedies
When I first started baking, I must have slightly burnt every item I tried. Tops were perfect, bottoms, not so much!! I quickly learned it's better to pull it early than thinking it can go another 30 seconds or minute!! It's semi-disasterous when we've moved into a new place or purchased new appliances, it seems I need a grace period when discovering the nuances of new tools.

Chicken and Cheese Stuffed Jumbo Shells
This was a good dish! Made them for a pot-luck style dinner. marinated the chicken first in an Italian dressing, then tossed with the breadcrumbs. Had used "Best marinara sauce" recipe instead of jarred sauce. Made a lot and had few trays for dinner, watched as many had 2-3 on their plate each trip!! Was a hit!

Bodacious Broccoli Salad
I used this as a starter. Added Freshly Fried Bacon bits, chopped pecans, and a pinch of celery seed. Fantastic! Used for a work pot-luck lunch, and everyone enjoyed!

Mexican Chicken Corn Chowder
Really enjoyed this recipe. Kind of combined a few of the reviewer's notes along with the posted recipe to create my own version. I used the Chicken Broth, and Heavy whipping cream, added diced red and green Bell Peppers and just small amount of diced jalapenos, and a can of drained whole kernal corn. Then I increased the amount of cheese to 2 cups each of Pepper Jack and Sharp Cheddar. Worked really well, reheated perfectly.
