Eggplant Rollatini

I baked the breaded eggplant instead of frying it. I thought the rolled eggplant could fit in a smaller baking dish (8x8 instead of 13x9) not sure if that would affect the way it cooks at all. Overall, I enjoyed it and would make it again!

Easy Mexican Casserole

I modified the recipe quite bit – added a packet of taco seasoning while browning the meat, used black beans and a can of diced tomatoes I also omitted the black olives and green onion as well. Overall it came out good, but definitely nothing special. The consistency was more like a dip than a meal. The tortilla chips added nothing to the flavor – just empty calories as I see it. I’d much prefer to eat the dish with chips after it’s done cooking so you can actually taste them. Makes a lot of leftovers which is nice.

Shrimp Scampi V

My boyfriend enjoyed this dish more than I did. I used slightly less butter and more garlic. The consistency seemed off to me somehow...it was a little too dry for my taste. Maybe the butter that I omitted would have helped.

Baked Ziti II

This recipe came out very good. I cut down the ricotta to a 15oz container and it was plenty. I also used a little bit more sauce than the recipe called for because I didn't want it to come out dry. Lots of leftovers too. Will make again for a quick weeknight meal.

Cheesecake Brownies

These brownies came out good and they looked very nice too! I added 1 tsp of vanilla to the cream cheese mixture as suggested by other reviewers. I did have to cook the brownies longer than usual, more like 40 minutes instead of the usual 30.

Banana Muffins I

I used 4 bananas and added a sprinkle of nutmeg and cinnamon as suggested by other reviewers. They came out great and were very easy to make. I would definitely make them again!

Six Can Chicken Tortilla Soup

I felt this came out pretty bland when prepared as described here. I had to add a lot of spices for it to have real flavor. I added cumin, red pepper flakes, chili powder, salt and pepper and I still wasn't crazy about how it turned out. If I were to make it again, I'd add onion and a chili pepper to give it more kick. Felt it was very watery, even though I drained the beans, corn, chicken, and diced tomatoes. Mine didn't look as nice as the one in the picture here either!

Flaky Crescent Mushroom Turnovers

Great recipe, i was very happy with the way this came out. I added a bit of mozzarella cheese to each turnover as per other reviewer's suggestions. It was so easy to make and my friends really enjoyed it. Will definitely make it again!

Best Yet Turkey Chili

This came out great! I added a chopped yellow onion and used one can of diced tomatoes with green chilis (the other can plain diced tomatoes). Added cheddar cheese on top to each serving. Very easy to make and plenty for leftovers. Will make it again!

Sausage Brunch Casserole

Served this for my parents for brunch...they loved it! I pre-baked the crescent rolls as suggested by other reviewers, used a combination of mozzarella and cheddar cheese, and used 5 eggs instead of 4. I baked it in a 13x9 inch casserole dish and felt that it might have been better in maybe an 8x8 casserole so it would be thicker. Not sure how much that would affect cooking time though. Overall it was great, would make it again.

Pumpkin Bread II

Loved this recipe! Had to cook it longer than the recipe specified (about an hour and a half), but the end result was great! I also omitted the walnuts and added semi-sweet mini chocolate chips. Everyone who tasted it loved it, will definitely make it again.

Beef and Parmesan Pasta

Good basic recipe. Very easy to make. Makes quite a few servings and it tastes good left over. I omitted the zucchini and used ground turkey instead of ground beef. Pasta does not need to cook for 15 minutes as described in the recipe. I cooked mine for about 7 minutes and it was plenty.

Turkey Loaf

I saw a similar recipe on this site that had salsa included, so I added 1/4 cup to this recipe. Overall, it was very tasty, but a little salty. Next time I will use less salt and a 1/2 tbsp of poultry seasoning instead. Easy to prepare and good enough to make again!

Southwest Chicken

As per other reviewers comments, I added shredded cheese and yellow onion. It was tasty! My friend made a delicious spanish rice which complimented the chicken dish nicely. I would make this recipe again. Quick and easy!
