Pasta with Scallops, Zucchini, and Tomatoes

Reviewed: Feb. 10, 2011
I added some ingredients to give it some more flavor. i added about 1/4 c chopped onions and 1/8 c chopped red bell pepper. Per another review I added butter and white wine before put in the scallops. I also added 1tbsp of fresh lemon juice. Also, I didn't have FRESH basil so I used some dried basil from our garden in the summer--I put in about 3 tbsp.

Grilled Gyro Burgers

Reviewed: Mar. 13, 2011
Too bland. You can add some spices to get a little bit more out of it (we added lemon juice from 1 lemon, ground pepper, 1 clove garlic, 1 tsp garlic powder). But it is so quick and easy and light that I will probably make again. We did not make the meat into patties since we had snow out on our deck but rather just browned and added the dressing and onions after we drained the fat. Adding feta to top it off really added a nice touch.

Seafood Skewers

Great easy recipe. I would add a little more hot sauce for a bit more of a kick. Also my grocery store was out of scallops so I bought some smaller frozen ones which of course were cheaper and it still tasted great.

Turkey Pot Pie

Reviewed: Nov. 30, 2011
I cut back on the parsley by half and was happy I did. Otherwise what a great way to use turkey left overs! My husband took leftovers to work, he NEVER takes left overs to work.

Chewy Peanut Butter Chocolate Chip Cookies

Reviewed: Dec. 6, 2008
This recipe works as a base for a good chewy peanutbutter cookie... Changes: -Double peanut butter if you reall like to have the taste, I also use chunky to give the cookie more texture -Take out 1/2 cup flour -1/2 the amount of chocolate chips -An I personally like to use honey instead of corn syrup. We also had to bake longer but our oven tends to be that way for everything. After the changes I would give the recipe a 4 stars (I think I would use a little less surgar and add even more peanutbutter next time)

Amazing! Look so professional. Based on previous reviews I froze the chocolates prior to adding them to cooked dough.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Apr. 5, 2011
I would strongly reccomend pounding out the chicken to 1/4 an inch or so. The first time I made this I had to wait forver for the chicken to cook. I would also suggest leaving out the flour, if you want to thicken the sauce in the end just add a tiny bit of corn starch.

Buffalo Chicken Dip

Reviewed: Jan. 12, 2011
With alterations definately 5 stars! Use real chicken and dice in food processor Add 1-2 oz blue cheese Mix cheese in instead of putting on top Bake in oven dish not pan, you can stir it and it keeps its yummy look longer than baking on a sheet topped with cheese. If you like things really spicey you can use some of Frank Buffalo Sauce at the hot level, using all at this level was way too hot for us but using it for about 1/3 of the sauce in the recipe really gave it a great kick for those who like thigns spicey

Slow Cooker Beef Stew I

Reviewed: Nov. 29, 2010
Super easy to make but I agree with other users that is it missing "something". To try and give it a little more flavors I mixed some beef borth and red wine for the liquid portion. I also added some spices, crushed red pepper flakes, rosemary, parsley. I think next time I will add more liquid and try one of the pouch seasonings for stew. Definately a keep and super easy though.

Scallop Scampi

Reviewed: Mar. 30, 2009
I used a combination of frozen shrimp and scallops. I defrosted them in warm water and sauted them rather than bringing the mixture to a boil. I also topped the plates with fresh parmesan cheese which really made a difference. We skipped the parsley. Both my boyfriend and i were really impressed with the simplicity of the recipe and the overall taste.

Peanut Butter Kiss Cookies

Reviewed: Dec. 6, 2008
Like another user said I triple this but use 1 part white sugar, 1 part confectioners sugar and 1 part brown sugar. I roll the balls in white sugar before I bake them. Wait about 4 minutes before putting the chocolate kisses in to help prevent them from melting. And as always use parchment paper for cookies that are easy to remove.

Zucchini Pasta II

Reviewed: Sep. 8, 2008
I cooked costco chicken like mentioned above and also nearly doubled the cream cheese to get the sauce to thicken. My boyfriend really like it and it was so easy. I used minced garlic from costco too snd also added 1/2 a red bell pepper in place of the roasted red. ALso, this makes great left overs.

Fiesta Stuffed Peppers

Reviewed: Aug. 4, 2008
Thought it might be a little bland so I added some jalapenos and crushed red pepper. I definately think that you could use more salsa as notes have said above and invest in a good salsa. Adding shredded cheese on top added a great touch. Think I will tweak it a little bit more but definately will try again.

Pork and Potatoes

Reviewed: Jan. 23, 2007
This dinner could have been a lot better with better directions. The potatoes that were on top or not fully covered barely cooked. Also the seasoning was lacking, trying a rub or even just salt and pepper on the chops before beginning would have added a lot more flavor.

Chuck's Favorite Mac and Cheese

Reviewed: Oct. 2, 2009
Definately a recipe worth a try. I too could have gone for a more cheesey taste. Like others I added milk, onions, used fiber enriched pasta and cut back on the bread crumbs. I also used freshly shredded parmesan in the noodle mix. My changes: I topped with a mix of canned parmesan and italian bread crumbs added some crushed red pepper flakes for a little kick. And to get some veggies into this, chop up some yellow squash, saute until just soft and add right in to noodle mix, tip from Rachel Ray.

Chocolate Caramel Brownies

Don't use glass! It cooks so much better if you use a pan. I also decreased the amount of chocolate chips by about 1/4 cup and mixed 1/2 cup in with the top layer of batter.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Dec. 4, 2008
I swapped out 2 cups milk chocolate for 2 cups butterschotch bits and got a great response. Like others have said cook for longer than 6 minutes, and I would also suggest not using the full amount of sugar, it was a little too sweet. I chilled over night covered in foil and thought they were too moist, will try cutting them and letting them sit out before boxing up.

Awesome, my husband and I loved it. The raisins and pine nuts really add a great depth to the flavor. Like others I doubled the spices other than the cinnamon
