Barlow's Blackened Catfish

Very good. Nice change from the usual fried catfish. I made the seasoning as written but sprinkled it on some of the catfish nuggets so I had some with more spice and some with less to suit everyone's taste. It is spicy! I usually cut salt but made this as written and it was fine. Definitely keep the fan on! All of us were coughing as it was blackening. No smoke, just the smell of the spices. Thanks for a great recipe!

Chewy Granola Bars

This has become a staple in our house. We'll never go back to the store bought ones. We made it as it is written adding various combinations of chips, nuts, etc. Make sure your butter is soft, you pat the mixture down in the pan and follow the cooling instructions - cool 10 minutes before cutting then cool completely before removing from the pan. That helps keep them from falling apart. In our house they never get completely cool before they start disappearing though.

Peppermint Cookies

Good cookie! I skipped refrigerating these and just dropped them on the cookie sheet. When they came out I put the frozen peppermint hershey kisses on top. They're a new favorite.

New York Cheesecake III

Make sure you beat the cream cheese before you add the other ingredients or it will be very lumpy. It's been a while since I've made a cheesecake and the instructions missed that step so mine turned out pretty bad. As other reviewers said the baking instructions are way off. I cooked it a little longer than it said (in a pan of water) and refrigerated for 3 days and it was gooey and tasted uncooked in the middle. I think the flavor was okay but it was hard to tell. If I do it again I will try baking at 325 for about 45 min next time.
