I think these are great and easy to adjust according to taste. Next time I'm going to up the dates or reduce the PB- also might reduce the cocoa. Skipped the salt. Wondering what a banana would do? Or some raisins? Think you can do some fun things!

Blueberry Oat Waffles

these were pretty good- i increased the servings to 10 so i could put a bunch in the freezer. the only thing i would change is they are a bit crunchier than i prefer, would be good either figuring out how to make them a little softer or possibly adding banana? will try these again!

Cannellini Bean with Flat Leaf Kale

this is simple and good. i changed it up a bit to what i had in the garden and cupboard. cooked bacon in a 5qt cast iron dutch over then drained most of the grease. sauteed the onion and garlic in same pot, adding chopped kale and chard when the onion was soft. stirred it up a bit then added 6 cup water, salt, pepper, thyme and parsley. brought to a boil for a few min til the greens were cooked. then tossed in a drained/ rinsed can of kidney beans and topped with the cooked bacon(chopped up). that was it. easy peasy and good!

Pizza Dough II

this recipe is so simple and awesome. i actually made it tonight (second time) and divided it into 5 crusts. made one and par baked the other 4 to freeze. they are super yum thrown on the grill, too. just grill top side down, then put on toppings and grill the bottom. so fun!

Fluffy Pancakes

i dont think i'll be making pancakes any other way, ever again! followed to a T and turned out awesome. had 4 under 4 that were veeeery quiet at breakfast(too busy stuffing their mouths!) i will say this just exactly fed my 18mo old, 2 3yr olds and my 4yr old along with myself. so plan accordingly if feeding more teens/adults!

Roasted Sweet Potato Corn Chowder

would be nice to add in the directions not to mix up the cubed potato and the sweet potato(when its time to put the first potato in the pot). i ended up having to mic a cubed potato and then wasnt able to do the 20min simmer because i'd put the sweet potatoes in in error. needed to not have one more thing to wash so skipped the pureed corn bit. next time will reduce some liquid and add cream.

Grilled Beef Gyros

For whatever reason I just wasn't impressed! Rather surprised as I thought for sure we'd like it. The only thing I did differently was to cut the cayenne down(kids). If we try it again I'd halve the soy sauce I think and use brown sugar.

My Navy Bean Soup

this really was salty- so glad i added a whole quart of water. it's a decent base, but needs something more. next time i'll up the carrots, add something green(kale? spinach? parsley?) and use a hamhock. could also been good with some mushrooms in it. definitely has potential!

Citrus Garlic Shrimp

Super easy and quick to do- my husband actually made it this evening. I would follow previous posters' advice to thicken up the sauce a bit and add in something green like broccoli or even parsley. Possibly some red bell for added color. Who doesn't love a pretty dish? Oh, and I didn't do any of the zests. Would also cut down on the oil I think a bit. Double the garlic(for our tastes). Great base!

Curried Wild Rice and Squash Soup

pretty good, my 11mo old gobbled up a whole bowl! it was a little orangey for me, i'd cut down on the oj or use half an apple maybe? also, a little bacon would make this to die for!***UPDATE used a granny smile apple instead of the OJ- DIVINE!

Potato Leek Soup I

i halved the recipe and it still turned out good. it was a little thick for my tastes but thats an easy fix. also had leftover ground ham that i sprinkled on top. served with apples and whole wheat bread, yum! (also, used on hand gold potatoes vs white. diff color and probably a little diff taste but still good.)

Orzo with Kale

it was ok but not that great. the orzo is way too much for that amount of kale. halve it(the orzo) and i think it is better. also needs something additional, maybe tomatoes, mushrooms or a legume. also, when cooking the kale it will overcook in just that olive oil. my garlic was brown/crispy and the kale not tender. i don't usually saute my kale that long(20min!) and it might have been better had i of followed all the other recipes i've used before with kale and that method.

BBQ Chicken Pizza I

holy moley. this is DELICIOUS! i don't even like chicken bbq pizza, we were just using some leftover chicken and someone mentioned trying it. we did use fresh mozz instead of the gouda and a reg white onion since we had that on hand. GREAT GREAT GREAT! i feel like we could open a pizzeria. Also, we did this on the grill.

i think this stuff is pretty delish. hot from the oven with butter and garlic on it, melts in your mouth! i could see adding garlic to the mix and more parm next time, but that is personal pref. i love garlic!

Blueberry-Orange Muffins

might have over done mixing(the husband was 'helping' and the first batch was dry like cornbread) but added a little milk and they fluffed back up. next time will try mini blue berries(if they exist/i can find them) maybe a little vanilla and double the orange zest.
