Bierocks (German Meat Turnovers)

The first time I made these was for "Oktoberfest" for a church group. I was running out of time, so I used pizza dough from the refrigerator case instead. I received lots of compliments, but knew they could be even better. The next time I made them, I added 2 cups of mozzarella cheese and used frozen yeast rolls. I let them thaw out and rise some, before rolling them out and bundling the meat mixture inside. They were fantastic!

Artichoke Chicken

Delicious! I think I cooked mine a little too long, as it got a little dry, but it got rave reviews from everyone there, including my picky husband. I put it on a bed of spinach (which unfortunately cooked down to just about nothing), put sauted onions on top, then the dressing, then some bacon. It was delicious! I served it with tri-color rotini and a salad. Fantastic!

Beaufort Stew

Excellent! Even my picky husband liked it! I was trying pieces as it cooked (I have no patience) and wasn't sure how good it was going to be. But, in the end it was fantastic. The whole was better than the sum of the parts. We used corn off the cob, because that's what I had, which broke tradition, but turned out pretty nicely.

Cocoa Oatmeal Cookies

Delicious! I went with the chocolate chips. My husband said "the bites with lots lof chocolate chips are the best." I thought they were great because they left me delighted with the cookie I had, not needing more, but I wouldn't have complained if I had to eat more. They're fantastic!

Slow-Cooker Chicken Tortilla Soup

It was really yummy. My husband even liked it. I cooked it all day while I was at work, and came home. We ate about half of it, maybe? And then I added half a cup of rice and let that cook on low for another two hours or so, and it made a great lunch for days to come. (My husband actually said he liked it better after the flavors had married and with the rice. He didn't come up with flavors marrying, that was my interpretation.) Excellent.
