Fig and Olive Tapenade
I made this for a red wine tasting party and it went over phenomenally. I used a thin layer of goat cheese on a crispy thin cracker with a small spoonful of the tapanade on top. I sent about 3/4 of it through a food processor so it wouldn't be so chunky that it fell off the crackers. It does definitely need the goat cheese rather than the cream cheese.

Strawberry Bruschetta
I made this to go with a red wine tasting party. I took a previous suggestion to use mascarpone cheese and I added a little bit of fresh chopped mint on top of the finished bruschetta when it came out of the oven for the final time. I only toasted one side of the bread and spread the cheese and strawberries on the other (watch it close when carmelizing so the bread doesn't burn!)

Peppermint Meringues
As stated before, very quick to whip up and easy. I added 1/4 tsp of peppermint extract and sprinkled some colored sugar on top. For those having problems with the eggs whipping up correctly, you have to be careful not to get any yolk in the whites or you won't get the stiff peaks you need. These sound very easy to add different ingredients to change the taste.
