Broiled Tilapia Parmesan

This earned rave reviews from my dinner companion! I did have to make a couple of changes: I had fresh lime, but no lemon juice, so I squeezed some lime into the mix instead of measuring. I also cut the butter in half (next time, I may omit it since Tilapia is so naturally greasy), and I didn't have any celery salt, so I added a dash of table salt. I'll make this again and stick with lime instead of lemon. It's a good fast & fancy main course.

Quick and Easy Pizza Crust

I let my dough rise and this is by far the best homemade pizza crust. For a different pizza, I suggest using taco sauce instead of pizza sauce and topping with taco meat, refried beans, crushed tortilla chips, tomatoes, green chiles, and a taco blend cheese. Fantastic!

Clone of a Cinnabon

I'm not very skilled when it comes to baked goods, I have egg issues, but these were amazing! Nobody could believe that I made them! I have a wood stove and placed the dough near it to rise. I baked them at 350 degrees for about 15 minutes. Also, I didn't make the icing because I don't like icing on cinnamon rolls. I highly recommend this recipe!

The Best Chicken Fried Steak

I cannot fry things. At all. I broke out the cast iron pan and decided I just HAVE to learn how to successfully fry something and figured it doesn't get much more classic than this. It was a success! The outside was crispy and the meat was tender! My dinner companions were shocked. Thanks for this great recipe!

Spinach Lasagna III

UPDATE: During Lent 2011, I made this recipe for my boyfriend's Catholic family for dinner on a Friday, and while they were making fun of me for my "hippie lasagna" they liked it. I went to grab leftovers out of the fridge for lunch the next day, and they had already been consumed by people who made fun of me and my hippie lasagna. ORIGINAL REVIEW: This was amazing! My roommate is a vegetarian, so we decided to try this one night. I wasn't keen on the idea because I'd tried many terrible meatless lasagnas in the past. But, one bite and I was hooked. You barely even notice that it's lacking a meat flavor. I did make some changes...I used light cheese and had to use cooked frozen spinach because fresh was banned at the time. We used Prego sauce. I also forgot to add the egg. We had a lot of filling left, probably because we like thin layers. I'd recommend this recipe...even to people who love meaty lasagna!

Best Chicken Ever

These were so crunchy! I used light sour cream, and a bit of ranch seasoning instead of Italian. I let the chicken sit in the sour cream/ranch mixture, in the fridge, for about an hour. I omitted the butter. Couldn't taste the sour cream at all, which I think is a good thing. As crunchy as fried chicken, but healthier. This recipe is a keeper!

Delicious Rosemary Bread

This bread is so good! I made it to go with the Beef and Barley Stew recipe from this website. I set it next to the wood stove to let it rise. Turned out wonderful, with just enough flavor. Instead of Italian seasoning, I used about a teaspoon of thyme, but kept the rosemary amount the same. Also, I melted the butter instead of using soft butter, it mixes better. I will definitely make this again!

Burrito Pie

Love this! My mom requests this whenever I go home to visit and my guy friends love it! Best of all, you can control how hot it is by using mild, medium, or hot taco sauce. I use 3 tortillas for each layer. It's never been runny, but I drain some of the liquid from the chiles and tomatoes. Also, you might want to gradually add the taco sauce if you're worried about it being runny. I serve this with lettuce, sour cream and cold beer. Delicious!

I do not mash the carrots and I usually use a package of frozen mixed vegetables mixed in with the meat. I think this recipe is great and it's a very good way to disguise peas and other veggies for children who don't like to eat them.

Dough Ornament Recipe

Cake Mix Cookies VIII

I used red velvet cake mix because we made them around Valentine's day, kids loved them, but adults (including myself) thought they had a bit of an odd flavor. However, I'm not good at baking and these turned out, so that bumps this recipe up from being a 3-star.

Cheese and Bacon Potato Rounds

These were pretty good. I'd cook the potatoes for a bit before putting the toppings on because they were a bit oily/mushy. Other than that, a nice, quick, easy alternative to potato skins

Lime Chicken Soft Tacos

The only change I made was using cilantro instead of oregano. I added probably 1tbs of chopped fresh cilantro. I used the juice of a whole lime. I boiled the chicken breasts so they'd be more moist & tender than frying. Mixed the other ingredients together in a pot, and added the shredded chicken, then cooked for about 10 minutes. This is also very good served w/mexican rice added to the taco.

Homemade Crispy Seasoned French Fries

I've been looking for a way to make baked fries crunchy. This batter worked! I omitted garlic salt & paprika, I was going for method, not flavor. Used onion powder and kosher salt. I added about 1.5Tbs of Extra Light Olive Oil(doesn't have flavor) to the flour mix and added water until I liked the consistency (maybe 5Tbs water for 1/2cup flour). I made sure the batter was just thick enough to barely coat the fry. I put half of them right on the baking sheet and half on a baking rack on the baking sheet. The rack method worked better, the ones directly on the sheet had a batter ring that smooshed out around each fry. I baked them at 350 degrees, in a convection oven, for 20 minutes & then checked them at 5 minute intervals. The outside was crispy, but didn't taste like batter, and the inside was soft but not gross.

Marinated Ranch Broiled Chicken

Let the marinate in the fridge overnight. Pounded them to uniform size before putting them on the grill. Served them as grilled chicken sandwiches. The chicken was moist and the flavor wasn't too bad, tasted the tiniest bit salty, perhaps because of the ranch mix I used. I think this may taste better as a beef marinade.

Chicken and Mushroom Saute

I used fresh mushrooms and served over angel hair pasta. Other than that, I made it according to the recipe as listed. This wasn't a good recipe or a bad recipe. I'll probably try making this again, maybe add some onions, use white wine instead of water and serve with potatoes & a green vegetable instead of over rice or noodles.

Savory Grilled Potatoes

This was the first time I've ever cooked potatoes on the grill. As others have said, don't worry about the mayo, it comes out tasting more like cheese. I forgot to grease my foil so the bottom layer of potatoes were dark brown and stuck to the foil. I microwaved the potatoes for 1 minute before slicing and cooked on a grill over medium heat for about 25minutes. I will make these again.
