Spinach Lasagna III

UPDATE: During Lent 2011, I made this recipe for my boyfriend's Catholic family for dinner on a Friday, and while they were making fun of me for my "hippie lasagna" they liked it. I went to grab leftovers out of the fridge for lunch the next day, and they had already been consumed by people who made fun of me and my hippie lasagna. ORIGINAL REVIEW: This was amazing! My roommate is a vegetarian, so we decided to try this one night. I wasn't keen on the idea because I'd tried many terrible meatless lasagnas in the past. But, one bite and I was hooked. You barely even notice that it's lacking a meat flavor. I did make some changes...I used light cheese and had to use cooked frozen spinach because fresh was banned at the time. We used Prego sauce. I also forgot to add the egg. We had a lot of filling left, probably because we like thin layers. I'd recommend this recipe...even to people who love meaty lasagna!

Bacon and Cheddar Stuffed Mushrooms

I used baby portobello stuffing size mushrooms and made these as a side dish. I cooked the bacon in the oven then chopped it. I chopped the onion and mushrooms and added them to the bacon before I realized I hadn't cooked them. So, the bacon was cooked twice and it was fine. I added a tbs of bread crumbs and a tsp of parsley. These were rich and savory. Great for people who love bacon, mushrooms and cheese.

Meatloaf with Fried Onions and Ranch Seasoning

I used 2lbs of ground beef. This was too bready tasting. If you like traditional meat loaf, stick with a traditional recipe. The fried onions really just added to the breaded taste and not much else. This gets 3 stars instead of 2 because my boyfriend kind of liked it, with ketchup, but he's not really a fan of traditional meat loaf. So, I added more meat and it was still too bready.

Breaded Center Cut Pork Chops

I omitted garlic powder and I didn't follow the flour/egg/crumbs exactly because I was only making two pork chops. I did follow the temp & times exactly, my pork chops are moist and crunchy and turned out better than expected. I only cooked 2 chops, so I put them in a glass pie plate, and I hesitated to pour the water in to cover the bottom, but I did so, okay, technically, I poured water to cover the spots the chops weren't covering, but you get the point, and it didn't make the breading mushy. I'll make pork chops this way again.

Bacon Cheddar Deviled Eggs

Chicken Gruyere with Sauteed Mushrooms

This smelled terrible while it cooked, but tasted better than it smelled. I used Chukar (partridge) instead of chicken, but other than that I followed the recipe. It wasn't amazing, but it wasn't gross. It's also very rich, so people don't eat much of it. I suggest pairing it with a side dish that's light. Probably won't make this again.

Key West Chicken

I've made this twice, just to give it a second chance. The second time I doubled everything in the marinade except the soy sauce. It still tasted like soy, no hint of lime. I think I'll try this again and omit the soy or double everything and reduce the soy to 1Tbs. If you want a strong soy flavor to complete your meal, then this is a good choice.

Oven Fried Potatoes II

These didn't taste like they had even a hint of lemon, but they were good potato wedges anyway. I followed the directions except I used a nonstick baking sheet prepped with cooking spray.

Honey Mustard Grilled Chicken

Freezer to grill in about 30minutes: I used the frozen chicken breasts that come in a bag. I forgot to thaw them, so I ran them under water to remove the ice glaze, then continue to run them under warm/hot water for a couple of minutes until only the centers were still frozen. Placed them on the lowest heat setting on a gas grill until fully thawed, flipping once. Then turned heat up and cooked according to recipe. Chicken was juicy. My boyfriend complained the sauce smelled horrible, but once he tried the finished product he said he'd eat it again. This recipe wasn't amazing, but it's a nice change from bbq chicken.

Grilled Brown Sugar Pork Chops

It took a long time for the glaze to thicken, about 35-40minutes. I used cold water to mix with the cornstarch. I will make these again, but next time, I will take the glaze off of the heat and let it sit for a few minutes. Also, it made a mess of the bottom of the grill. I suggest getting the glaze almost as thick as you want it before you start grilling the pork chops.

Savory Grilled Potatoes

This was the first time I've ever cooked potatoes on the grill. As others have said, don't worry about the mayo, it comes out tasting more like cheese. I forgot to grease my foil so the bottom layer of potatoes were dark brown and stuck to the foil. I microwaved the potatoes for 1 minute before slicing and cooked on a grill over medium heat for about 25minutes. I will make these again.

Chicken and Mushroom Saute

I used fresh mushrooms and served over angel hair pasta. Other than that, I made it according to the recipe as listed. This wasn't a good recipe or a bad recipe. I'll probably try making this again, maybe add some onions, use white wine instead of water and serve with potatoes & a green vegetable instead of over rice or noodles.

Homemade Crispy Seasoned French Fries

I've been looking for a way to make baked fries crunchy. This batter worked! I omitted garlic salt & paprika, I was going for method, not flavor. Used onion powder and kosher salt. I added about 1.5Tbs of Extra Light Olive Oil(doesn't have flavor) to the flour mix and added water until I liked the consistency (maybe 5Tbs water for 1/2cup flour). I made sure the batter was just thick enough to barely coat the fry. I put half of them right on the baking sheet and half on a baking rack on the baking sheet. The rack method worked better, the ones directly on the sheet had a batter ring that smooshed out around each fry. I baked them at 350 degrees, in a convection oven, for 20 minutes & then checked them at 5 minute intervals. The outside was crispy, but didn't taste like batter, and the inside was soft but not gross.

Dough Ornament Recipe

Other than a little puffiness, this recipe worked. I let kids cut out heart shapes to make Valentine's magnets for their parents and these were light enough for that.

Four Cheese Macaroni

Perhaps my expectations were too high, but this was not very good. I thought it'd be great since it had a high-rating and good reviews. It wasn't very creamy and the texture was questionable. I won't use this recipe again.

Best Brownies

Didn't like these at all. The sugar taste is overwhleming. The frosting was okay, but had a funny aftertaste. I may try them again to see if they turn out better, since these are so highly rated. But, as of now, I wouldn't recommend this recipe.

These were pretty good. I'd cook the potatoes for a bit before putting the toppings on because they were a bit oily/mushy. Other than that, a nice, quick, easy alternative to potato skins

Chicken and Broccoli Alfredo

I had some broccoli to use up and had all of the other ingredients on hand so I decided to try this. It's a good, reasonably quick meal. I suggest serving it with a garlic or cheese bread.

The Best Chicken Fried Steak

I cannot fry things. At all. I broke out the cast iron pan and decided I just HAVE to learn how to successfully fry something and figured it doesn't get much more classic than this. It was a success! The outside was crispy and the meat was tender! My dinner companions were shocked. Thanks for this great recipe!
