Fabulous Homemade Bread

Reviewed: Sep. 3, 2008
I cut mine to two loaves. Slightly disappointed because it didn't rise as well as it should have the second time(sat for two hours and only as high as a banana bread), but I baked it anyway and while it is flat and I can't make sandwiches of it, it is still very good and I hope next time is better!

Brooke's Best Bombshell Brownies

These were ok. Yes, they were chocolatey, rich, and chewy. But they stuck to your teeth like toffee. Not the BEST EVER in my opinion.

Beef Pot Roast

Reviewed: Jun. 15, 2008
My husband made this one night when we had company and it was wonderful, the meat drippings make a great gravy. If you like a smooth gravy I would use a hand blender to blend up all those onions. Making on purpose left overs tonight!

Beef Stew V

Reviewed: Dec. 3, 2007
Just what I was looking for...a healthy beef stew. Can't give it a 5 cause I changed so much. Scaled it to 6 servings. I used one tablespoon olive oil instead of all that butter/veg oil to sear meat. Used about 1/4 lb more meat then called for, but trimmed the fattiest pieces. Whole wheat flour for the coating and about two tablespoons worth to thicken it. Probably could have gotten away with less. Used about 3/4 less potato then called for. Store was out of pearl onions, used boiling onions, quartered. That all should have brought the protein/carbs/fat closer to 40/40/20 which is what I try and make most of my meals. Yummy too!

Whole Wheat and Honey Pizza Dough

Reviewed: Nov. 14, 2007
Really really good. I split it, froze half and rolled half out thin and then topped it with marinara sauce, mozzarella cheese, red peppers, chicken, red onions, and raw broccoli. It was wonderful. Ate half of the pizza, took the other half to work the next day. So I can vouch that it is quick and tastes good right then, reheated, and baking after freezing! Thanks!

Lentil Stuffed Tomatoes

Reviewed: Oct. 1, 2007
Very good. I used quinoa instead of rice, scaled the recipe down to 2 servings with 1 tomato (essentially double stuffing, half tomato), and baked in toaster oven minus the "hat". Love the mint, it goes wonderfully with the ingredients. What I didn't like was the tomato middles/garlic "sauce". Just toss the tomato insides and drizzle a tiny amount of oil on top of the stuffed tomato before baking. Use quinoa! It makes recipe is so much better than boring (not healthy) white rice.

I couldn't eat it at all, it was so spicy and neon green, it had too many peppers for my taste.

Banana Muffins I

Reviewed: Feb. 20, 2007
These were wonderful! I used a touch of nutmeg and cherry vanilla yogurt instead of the sour cream. The cherry flavor added a tang to it, I may use straight up cherry yogurt next time. Thanks!
