Pork and Cabbage Soup

Esay, economical & yummy! I used homemade chicken broth instead of beef broth & bullion. I also added some red pepper flakes, a bay leaf, a sprinkling of caraway seeds & dried basil instead of marjoram, which I did not have on hand. Very good. We buy pork by the 1/2 directly from the farmer, and I always struggle to use up all the sausage. This recipe will help a lot!

Banana Nut Bread I

Man! Just took my loaves out of the oven & sliced off a piece-- this is some fantastic banana bread! I subbed butter for the shortening, reduced the buttermilk to just 1 cup & reduced the sugar to 2 cups. I will be making this one again, for sure!

Chicken in Every Pot Pie

Very good! I used red bell pepper instead of carrot & added a little corn (and a small clove of garlic) and used biscuit dough from scratch. I will make this recipe again, though. It was super simple & can been easily adapted to whatever veggies I have on hand. Filling & satisfying.

Slow Cooker Adobo Chicken

This is a recipe I return to often. I add half vinegar & half white wine, when I have it, more garlic, and about three cups sliced mushrooms. Very yummy & easy.

Burrito Pie

The man loved it-- even sought out and then consumed all the leftovers, which he never does!! I halved the recipe & added fajita seasoning for more mexican flavor. Very good with sour cream and tabasco chipotle sauce! Would like to try with corn tortillas instead of flour.

Chocolate Oatmeal Cookies

I've been looking for a variation on tired, old Tollhouse, but the man insists on chocolate chips! These are fantastic! Chewy and soft, even the next day. No hard cookies here! Very rich and chocolatey. The cinnamon complements the chocolate nicely, adding a unique flavor, and the cocoa powder makes them not just oatmeal cookies with chips in them. Double the recipe to make 72. Sounds like too many cookies, but who measures them out by the teaspoon?! Definitely glass of milk territory!

Chicken Tetrazzini IV

This is indeed a wonderful dish. I loved it as is, but the man wants more sauce next time, so I will increase sauce by half. I also used fresh mushrooms and added two cloves of crushed garlic with the melted butter, sauteeing briefly. Will definitely make again!

Caramelized Baked Chicken

This is a really tasty recipe! VERY RICH. My six year old didn't like the sauce, but he doesn't like any sauce. This would be a big hit at a potluck. Quick, easy, and finger-lickin' good!

Sugar Glazed Salmon

Yummy! My picky, "Don't let that fish touch my steak!" boyfriend even admitted this was good. Sweet and tangy at the same time. Adds flavor without overwhelming the salmon. Use fresh basil (~2 Tbs) for best flavor. Garlic salt is unnecessary. Just add some salt and more garlic!

Whole Wheat Muffins

Very good, basic muffin recipe. Can be easily adapted by adding fruit, etc. Add chopped chives to the batter and a cube of cheese in the center of each muffin tin before baking for "dinner" mufffins.

Ramen Coleslaw

I, too, have been looking for this recipe for years! Absolutely yummy! Add a couple of teaspoons of sesame oil for more Asian flavor. The recipe fails to mention that the ramen noodles should be broken up into small pieces before mixing ingredients. Someone who has never prepared/eaten this slaw may not undererstand that step. Make this salad 3-4 hours ahead so the noodles have time to absorb some moisture and soften up. The addition of chicken or turkey would make this a whole meal salad. Delicioius! Picky kids and some men may find it "weird", but I could eat this once a week.

Chicken With Mushrooms

My family did not enjoy this recipe. The sauce was too rich and salty, with too many overpowering flavors. Leaving out either the onion soup mix or the mushroom soup may improve the results.

Italian Style Meatloaf I

This is a yummy meatloaf! I added fresh rosemary, basil, thyme, and sage from the garden, and it was delicious! I also used oatmeal for a binder instead of bread crumbs. This recipe would only be improved with the additon of some pork sausage. The loaf will probably need to be drained before it is done cooking, as the mix is quite watery because of the tomatoes. This is an absolutely delicious recipe, and it smells wonderful cooking. Of course my son picked all of the tomatoes out of it!

A very easy and comforting breakfast/brunch or emergency dinner recipe. Add green pepper and/or fresh mushrooms or even sauteed onions for variety. Kids will love this recipe without the mushrooms. A great dish for the frantic holidays.

Chinese Roast Chicken with Gravy

This is a yummy recipe! Yes, the sauce tastes salty straight out of the pan, but over rice it's wonderful. Low sodium soy or using half soy sauce and half water might also work. The leftover sauce is great in stir fries, etc. Simple and very good.

Daria's Slow Cooker Beef Stroganoff

I replaced the flour with 2 tbs of corn starch and eliminated the extra water. The meat and the fresh mushrooms I used made more than enough liquid. This recipe is quite tasty and easy.
