Fresh Fruit Minty Dip

I substituted low-fat vanilla yogurt for the Greek yogurt, and omitted the vanilla flavoring and confectioners' sugar. The texture was much more fluid, but it was still tasty... I prefer the original recipe. Perfect for parties!

Spiced Coffee with Cream

Pumpkin Muffins II

LOVED these! I really enjoyed the spice level (they are super spiced) but I can understand the desire to cut the spices back a bit. I've made it several times now, and I like them best when I cut the nutmeg back to 1 1/2 tsps and the allspice back to 1/2 tsp. I followed another reviewer's advice and replaced one of the cups of flour with a cup of rolled oats, and they sort of blend into the muffins as they cook, so they turn out very tender but with just a bit more structure. I also reduced the sugar to 1 1/2 cups because I like my muffins not so sweet. Great recipe!

Tender Potato Biscuits

These were delicious! I made the recipe as directed, but doubled it. I thought "8 servings" would mean 8 biscuits, but I ended up with 24! Not complaining at all (and neither are my kids). One thing to note with this recipe (and all biscuit recipes): essential to keep ingredients cold. The butter needs to be hard, straight from the fridge. If it's softened or melted, the dough will be too sticky to handle. Use cold water and cold milk, and make sure the mashed potatoes are at least room temperature (although the dough will be easier to handle if they've been refrigerated). We ate these with turkey and gravy for lunch on the day after Thanksgiving... couldn't have been better!

Oatmeal Pancakes II

We love this recipe! We've been making it every weekend for about six months now. I add one teaspoon of cinnamon, and always double it to feed our 4-person family. If you want to sneak in a bit more protein, substitute the buttermilk for equal parts greek yogurt and milk. Also, if you're out of buttermilk and do the recommended substitutions, know that using vinegar will bring out a salty taste in the pancakes. I prefer lemon juice. This recipe is a superstar!

Wine Baked Potato

A great recipe! I used olive oil and marsala cooking wine, but I left everything else the same. Next time, I'll definitely add some salt and pepper before I bake them, though. A few tips on stuffing the potatoes: Cut them about 3/4 of the way through, and slide a thin butter knife into the cuts and turn it slightly sideways so it holds the potato open.

Easy Alfredo Sauce III

Very good, but because of the cautions about it being lumpy, I skipped the eggs and added a 1/2 tsp. of cornstarch mixed with 1 tbsp. water. I also added a 1/2 tbsp. of italian seasoning, a diced roma tomato, one diced clove of garlic and a handful of diced mushrooms. This is a great basic sauce to experiment with. Thanks!

Peanut Butter Dog Biscuits

As a few other reviewers mentioned, wheat flour is not great for dogs (although whole wheat is much better than all-purpose). I've made these a couple of times now, and I like to substitute the flours for ground oats and ground brown rice (equal parts). I just throw the rice and oats in my food processor and let it run for several minutes until they're fine and powdery. They absorb a little more water than the flours, so I also add an extra two tablespoons of peanut butter to help hold them together. These are a great accompaniment to the Christmas treat plates we give out to our pet-loving neighbors!

The Best Rolled Sugar Cookies

GREAT cookies! The dough is easy to work with, and the shape holds up great in the oven (doesn't spread at all)! They could use a little oomph in the flavor department, though, especially if you're just using a powdered sugar/milk icing. I like the advice given by another reviewer, LeBelleMelange... add the zest of one lemon and it makes these cookies complete winners!
