BBQ Chicken Calzones

My hubby loves the BBQ chicken pizza from Papa John's so we wanted to give this a try and it was so good! We used all of the ingredients in the recipe but changed them up a bit based on our personal preferences. For example, we definitely used more bacon, bbq sauce and cheese. We also added grilled diced pineapples and we used a rotisserie chicken.

Guacamole

Amazingggg!!!!! I love guacamole and I could eat it everyday! I have never tried to make it myself because I hate chopping onions and tomatoes. Well we had a little get together so I decided to go ahead and try this out. OMG let me tell you I will be making this again and again! Everyone loved it and voted that I am now the official guacomole maker. lol! I didn't follow this recipe exactly but I did use all the same ingredients. I changed it up based on personal preference, like less onion and more salt. I also added cumin as others suggested and will definitely add it again next time I make this. Yummy!

Too Much Chocolate Cake

Wow! This recipe is amazing! I made cupcakes for my husbands bday and everybody loved them. The only thing I did different was I used 1/2 cup applesauce in place of half of the oil. I also added some milk because the batter was pretty thick and I was nervous about it. I didn't know what the constincency was supposed to be like but it didn't hurt them. FYI: I ended up being able to make 34 cupcakes with this recipe and they baked perfectly at 19 minutes. They didn't dome up, they actually sunk a little bit in the middles, which was ok bc I was topping with ganache so I didn't want a dome shape anyways.

Slow Cooker Pulled Pork

Amazing! I have been wanting to try this for a while and I am so glad I finally did! I am giving this recipe 4 stars because I added about 5 other ingredients that I think really helped the overall flavor of the dish. I used a 7 lb. bone in shoulder cut. I seasoned it very generously with Slap Ya Mama (cajun seasoning) and I also rubbed it down with some liquid smoke. I cooked it on low for 6 1/2 hours with a bottle of IBC rootbeer and a small can of beef broth. I also added an onion and about 4 cloves of garlic. I took it out the slow cooker to shred it and it was just falling apart it was so tender. I was very nervous about the rootbeer but it was actually really nice. I could taste it but it was very subtle. It just gave it a nice sweetness. When I added all the pork back into the slowcooker I left a little bit of the juice and then I used an entire 40 oz. bottle of Sweet Baby Ray's Hickory & Brown Sugar barbeque sauce. I had some of the honey bbq on hand too so I added a little bit of that too. I continued to cook for another hour on low. Yummy!!!! I will definitely be making this again and again and again!!!!

World's Best Lasagna

Wow! This was my first time making lasagna and this recipe is terrific! I used a little more sausage and ground meat than called for just because it came with more in the pack. I read alot of the reviews before making this and I also only used 1 tablespoon of sugar and 1 teaspoon of salt. I did season my meat with some cajun seasoning. I let my sauce cook for 5 hours. It really isn't that time consuming because all you are doing is stirring a pot. I did not add any salt to the riccota either but I did add a dash of nutmeg. I added 2 more cloves of garlic. I bough one of those throw away pans from the grocery store and I am thankful I did because it was filled to the top. Next time (and their will be a next time) I am going to add more cheese, use less sauce because I used it all and it was alot, use red wine instead of water and maybe add more nutmeg. Yum!

Buffalo Chicken Dip

Wow this was soooooo good! I made it for a football party and everyone loved it! I got many requests for the recipe! I didn't use canned chicken either. I've never had it before and I was too scared to try it now. lol! I made a big gumbo for the party so I just boiled 3 extra chicken breasts. Perfect amount. The only other thing I did different was I used more than 3/4 cup hot sauce, more like 1 1/4 cup. I also did not find the need to use all the cheese, I used just about a handful. I couldn't find Frank's so I ended up using Louisiana wing sauce, which was awesome! I threw it all in the slow cooker and didn't use the stovetop at all except to boil the chicken. I served it with Tostitos Scoops! Just writing this review makes me want to make some right now!

Chocolate Candy Bar Cake

I made cupcakes instead of a cake! I followed the recipe for the cake exactly as writen. They came out very moist and delicious. For the icing I used a little bit less sugar than called for and a little more cool whip to make it a tad creamier. I made these for Thanksgiving so to please everybody I used 3 different candies; Butterfinger, Kit Kat, and Heath. The Kit Kat was the family favorite, but the colors of the Butterfinger were perfect for really cute fall cupcakes! I didn't feel the need to freeze the candy. I used my Pampered Chef chopper to chop it all and it worked wonderful.

Best Big, Fat, Chewy Chocolate Chip Cookie

These were yummy. I made these so long ago that I really don't remember if I changed anything or not. I don't think I did. I do remember that they were good though. My only complaint is that I wish they would of baked up a prettier golden brown.

Rempel Family Meatloaf

We really didn't care either way for this meatloaf. It wasn't bad, but it wasn't really that great. I used 2 lbs. of ground meat and though that 2 eggs was too much. I also did what Connie said and used cheese crackers and a cheese blend instead of just cheddar and sifted out the soup mix and left just the onion flakes. My husband and I thought it was just really bland even after heavily seasoning it with cajun seasoning. (I'm from Louisiana, we season everything heavily!) I even used Chipotle flavored cheese crackers. I was really disappointed because I guess I had high expectations, but the flavor just wasn't there. We couldn't even taste the cheese, just seemed like a waste of calories. But oh well :)

Slow-Cooker Pepper Steak

This was really really good! My husband could not stop eating it! I also bought beef that was already cut up from the grocery store to save some time in the morning. I read quite a few reviews so I would know what to expect and here is what I did. I seasoned the meat very generously with Slap Ya Momma (a cajun seasoning from where I live in Louisiana) and put it straight into the crockpot without browning it. I doubled the bouillion cube and water and I set it on low for about 9 hours (without the peppers) and left for work. When I got home I added a little bit of beef broth to make a little bit more gravy and another tablespoon of cornstarch and a ton more seasoning because it was pretty bland. I continued to let it sit on high until we were ready to eat. When I put the rice cooking that is when I added the peppers, I used green, red and yellow to add color. When the rice was done the peppers were perfect, just the right amount of crunch. Yummy! I will definitely be making this again. Here in Louisiana rice and gravy is a staple at the dinner table, my mother cooked it every night when I was growing up. It was really nice to be able to have something very similar without all the effort and added oils and fats.

Great icing! I really only tasted a dab of it because I don't really care for icing. Everybody else thought it was great though and told me not to change a thing. I used half butter and half shortening. Perfect!

Cake Mixes from Scratch and Variations

I really didn't care for it and neither did my husband. I made the white cake for cupcakes. I did as other reviewers suggested and used oil instead of shortening and added more sugar and milk. My cupcakes came out way too packy. They were not fluffy at all. It wasn't dry though, which alot of other reviewers mentioned. I gave this recipes 3 stars because they weren't inedible, but I will probably never make this again. I think box mix would've been way better.

Chicken and Dumplings III

Amazing! I had actually never even tasted chicken and dumplings when I made this. My friend and I were sitting around my house one day and we wanted to cook and she mentioned chicken and dumplings, so I got on here and found this recipe. Wow...really good! I even went to Cracker Barrel and ordered chicken and dumplings and they were disgusting! I used thigh meat instead of breasts just because I don't really like white meat all that much and I also used 1 can of cream of chicken and 1 can of cream of celery. I also added some cajun seasoning to spice it up just because we love spicy!!!

Slow Cooker Chicken Taco Soup

I cooked this in the slow cooker all day and when my husband and I came home we were kind of nervous to eat it because it didn't look very good. lol! But once we ate it we thought it was excellent! We had leftovers for days!

Crawfish Fettuccine I

I am from South Louisiana and I eat this all the time at restaurants and weddings and was thrilled to find this recipe. I loved it! I also love to read other reviews and see so many people freaking about it being so spicy. lol! Well I added a ton more. There is no such thing as too spicy where I come from! lol!

Beth's Spicy Oatmeal Raisin Cookies

These cookies were sooooooo GOOD!!! I made them with chocolate chips instead of raisins. I also didn't realize that I don't like cloves. lol! But they were still amazing. So the next time I make these they will just be regular old oatmeal chocolate chip cookies. No spice. lol! I bought them into the office and they were gone in 5 minutes.

Cajun Appetizer Meatballs

These meatballs were absolutely way too salty. I am from South Louisiana and I hated them. I was planning on making these for a family Christmas party and was trying to show off my cooking skills...well...that didn't happen. My husband and I couldn't even eat them so their was no way I was serving them to my family. I actually ended up going to the store and buying frozen meatballs. I did enjoy the sauce which is why I even gave it 2 stars. I used barbeque sauce from this really great bbq joint and apricot preserves because I couldn't find peach.
