My favorite things to cook
I love to cook. Period. I can't think of a favorite thing - I just love to feed people! I probably cook Mexican foods the most because that's what Better Half and I love to eat, but I also bake as much as I can get away with. I am a cookie monster - love to make 'em, love to eat 'em - but I also love making cakes, cupcakes and pies.
My cooking triumphs
Like any other cook, I just love hearing, "that's the best ____ I have ever had!" The grands have told me that about my scrambled eggs (?!), meatloaf and tacos, one has said that frequently about my deviled eggs, and a future SIL has said that about my sweet potato souffle.

Baked Salmon II
Excellent marinade that beautifully enhances the flavor of salmon. One of those "Doh! Why didn't I think of that?!?" sort of recipes. I followed it exactly - so easy, "fast food" at home, and Better Half (who claims to hate fish) loved it. This is going into our standard rotation of meals. I served it with a baked sweet potato and bacon-onion braised green beans. Delicious!

Caramel Snack Mix
Wow. This is one awesome recipe! I made some to give away as Christmas treats and Better Half was SO upset that I didn't save any for us. He promptly went out and bought the ingredients for our own batch. It's that good. It turned out perfectly, but I did have to work very hard to get it out of the baking pan after it cooled. I think I should've kept stirring it until it was cool enough to take out. I'll be reading the other reviews to see how others avoided that problem. Thanks for this super recipe!

Cornbread I
THIS is cornbread. Perfect recipe. I like my cornbread to be a bit sweet so I add a couple tablespoons of sugar, but that's just a personal preference. This recipe is great for those on gluten-free diets.
