White Bean and Artichoke Salad

I love, love, love this recipe! It does taste better after sitting for a day, or even two, but I can rarely make it that long. Usually it's gone by the next morning! The only change I've made is to use either Kalamata or tiny Nicoise olives instead of black. Took this to a party-it was gone in no time. Yum!!!

Great Mac and Cheese

My 5 year old loves this recipe. I left out the onions but added some garlic powder for flavor. I found that the hardest thing was getting the right proportions of macaroni to liquid because it's hard to judge 8oz from a 16oz box. However, it's still great and soooo easy!!

Moroccan Lentil Soup

I LOVE this recipe. I'm a vegetarian, and I'm always looking for easy, yummy main dishes. My husband likes it too and he's not a big lentil fan. It's so good I have been making it all summer, even though it's much more a cool weather dish. The only minor change I make is to add some salt before pureeing. YUM!!!

Granny's Corn Flour Tortillas

This was pretty easy and the tortillas are great once you get the hang of it. My problem was that cooking the tortillas on high created a huge amount of smoke in my kitchen even with the fan on! I think either making all the tortillas ahead of time or using a press would make it easier so you could watch the cooking instead of making more tortillas. But for my first time I'm pretty impressed with the results.
