Luscious Tropical Dream Cake

I have made this cake for years, always getting great reviews. The only thing I change is to mix in an 8 oz. pkg. of cream cheese with the pudding and milk mixture. It's best when refrigerated overnight, making it great for potlucks.

Grandmother's Buttermilk Cornbread

I have been cooking for 50+ years and this is the best cornbread I have ever made!!! I use this recipe often. Since I am only cooking for two, I usually divide the recipe between 12 regular muffin cups. I bake them about 15-20 min. When cool, I put them in a freezer bag and freeze. When I need cornbread, I just pop a couple in the micro for a minute or so. My husband likes the outside toasty, I like a soft moist center, so this works perfect for us. Whether you use the 8" square pan or muffin cups, this is the perfect recipe.

Amazing Pecan Coffee Cake

This coffee cake is perfect. I have made it several times for my Sunday School class and there is never any left!! I made is for my husband's ESL class and now I'm trying to translate the recipe into spanish since several of the ladies asked for it (in spanish)!! I make it with no changes and it's perfect every time.

Chicken with Asparagus and Roasted Red Peppers

I cut the chicken in thin slices (makes it easier for my husband who has Parkinsons) and sauted it quickly in a little olive oil. I then added the broth and proceeded with step two of the recipe. I covered the skillet while cooking, about 10 min, and it came out perfectly. Served it over pasta. For our taste, I will add a little more garlic and some basil next time. I have fresh asparagus and this is definitely a recipe I will use again and again.

Soft Christmas Cookies

This makes a wonderful cookie. I just finished a triple batch of valentine cookies. Coming from a dairy background, I only use butter, and did lower the temp to 350 since I was using a convection oven, baked them 9 min. I was sure to cream the butter until it was truly light and fluffy (having a heavy duty stand mixer is a benefit) and rolled them out on a silicon mat, eliminating the need for much flour. They hold their shape and stay soft, a plus when making them for children. I frosted some with Sugar Cookie Frosting and drizzled some with chocolate. They taste great and make a wonderful presentation.

Red Velvet Cake I

Made this cake using the suggestions by other reviewer to use 1c oil, 2c sugar and 4T cocoa. Used a 9X13 pan and baked it for 50 min. Was perfect, light and moist, with great flavor. The frosting is the perfect finish. Took it to a New Orleans night at chuch and it disappeared. I got great reviews!!

San Antonio Salad

Wonderful recipe!! Made it for a salad potluck at chuch - it was all gone!! I left out the jalapeno - was an older group - but would use it and hot salsa for my family. Made everything the night before and mixed it just before we ate, was perfect!! Will make this again and again!!
