About this Cook
The third of eleven children, I grew up cooking!! Having lived most of my adult life in Southern Caifornia I have been exposed to every kind of food out there. My husband enjoys all types of food,so I often can be found in the kitchen trying out a new recipe!!

Baking is a real joy of mine, but I also enjoy making main dishes.

My cooking triumphs
We served a crab stuffed salmon for my daughter's wedding. With the help of my sister-in-law, we prepared this very formal dinner for 75 guests. We still get compliments from guests (17 years later)!!
My cooking tragedies
After putting all the final finishes on a wedding cake, the whole side of the bottom tier broke off!! I had to dismantle the cake, rebake and decorate the bottom tier. Thank goodness the wedding wasn't until late in the afternoon!!

Red Enchilada Sauce
I needed a quick sauce for cilaquiles. This went together fast with ingredients I had. I used a New Mexico chili blend, simmered it down a bit and pureed it smooth. Maybe not "authentic" but it certainly is good. I'll definitely make this again and can't wait to try it on enchiladas. It has a great flavor.

Grandmother's Buttermilk Cornbread
I have been cooking for 50+ years and this is the best cornbread I have ever made!!! I use this recipe often. Since I am only cooking for two, I usually divide the recipe between 12 regular muffin cups. I bake them about 15-20 min. When cool, I put them in a freezer bag and freeze. When I need cornbread, I just pop a couple in the micro for a minute or so. My husband likes the outside toasty, I like a soft moist center, so this works perfect for us. Whether you use the 8" square pan or muffin cups, this is the perfect recipe.

Amazing Pecan Coffee Cake
This coffee cake is perfect. I have made it several times for my Sunday School class and there is never any left!! I made is for my husband's ESL class and now I'm trying to translate the recipe into spanish since several of the ladies asked for it (in spanish)!! I make it with no changes and it's perfect every time.
