Judy's Strawberry Pretzel Salad

This jello salad is a staple in my hometown in western PA, showing up as a side dish at every family function, but surprisingly few people here in my new home of Columbus, Ohio were familiar with it. This recipe is the best I have ever come across and has been a HUGE hit every time I make it. My Georgia-born hubby had never heard of such a thing when I first made it for him and now he begs me to make it! Anything that gets him to praise my culinary skills deserves 5 stars..a nd then some! :-)

Lana's Sweet and Sour Meatballs

I just made this for dinner the other night and it was a big hit! Following other reviewers comments I doubled the sauce (since I was serving as a meal over rice) I also omitted carrots because I didn't have any. All in all this was very tasty but also very sweet! Next time I will cut down on the sugar a bit, but still delicious! I am sure it would make an excellent app. too.

Gingerbread Men

I have made these gingerbread men for several years now and they are always a big hit! My family begs for them each Christmas and they are the first cookie to go. I do alter the recipe a bit by adding 1 tsp each of salt and allspice. Plus you really need to at least double this recipe if you want a good number of cookies. I use a fairly standrd Wilson cookie cutter and only get about 18 cookies per recipe. I could eat that many myself, these are so good!!

White Chocolate and Cranberry Cookies

I just made 9 dozen of these for a Christmas cookie exchange and they came out beautifully! I used 1 pkg of Craisins (which I pre-soaked in warm water to soften) and 1 pkg of white chocolate chips. The only changes I made were that I reduced the amount of white sugar by half and added some salt (I personally like the salty/sweet combo in my baked goods) The cookies came out perfectly! Very tasty..and I am not a big fan of cranberries. This one is a keeper!

Avocado, Tomato and Mango Salsa

This is a staple in my home!! We love to have this with Cajun grilled Salmon and jasmine rice and then enjoy the leftovers with tortilla chips for days after! Soo good. I do reduce the amount of olive oil to 1 TBSP and I add a bit extra jalapeno (we like our food with some kick!) It's a great make-ahead too, as it's even better the next day. Make this for company and they will be begging for the recipe!

Cream Puffs

These get rave reviews every time I make them! My family actually requests these any time they are coming to visit. I like to drizzle melted semi-sweet choc. chips on top for a little something extra special. Soo yummy and deceptively easy!

Blackened Salmon Fillets

One word - YUM!! I made this for the first time last spring for my hubby's b-day and we love it so much we have it at least once a month. I serve this along with the Avocado, Tomato and Mango salsa and jasmine rice. Delicious!! (It does have quite a bite to it, so if you don't care for spicy seasonings, cut down on the cayenne or skip this altogether.)

Beth's Spicy Oatmeal Raisin Cookies

Always a crowd pleaser, even amongst all of the 'fancier' Christmas cookies on the platter! I have made these for several years now and they always turn out great and stay nice and soft. I use all butter, as other reviewers have said, and I add 1/2 tsp of allspice for extra zing. Delicious!

Tangy Honey Glazed Ham

This recipe is very, very tasty,and I have made it several times, but the proportions don't measure up for me. I always need to double (or triple!) this to cover a 10 lb ham. So for that I only gave it four stars, but it is really yummy!

Easy OREO Truffles

I got this recipe for "Oreo Balls" at my cooking club cookie exchange last year and have had HUGE success with them. I made them for my hubby's company picnic and they were so well received that I had people actually asking if they could pay me to make them for their families for the holidays! The recipe I have is the same as this except it calls for refrigerating the scooped balls for 1 hour before dippings, and also calls for dipping half of them in milk chocolate and half in white chocolate, then drizzling the opposite flavor over the top. (a slotted spoon works really well for both dipping and drizzling) An A+ recipe for sure!

Easy Sugar Cookies

I had high hopes for this recipe given the numerous glowing reviews, however after having just made them exactly according to recipe the best I can say about these cookies is they are ok. I bake frequently with near 100% success with each recipe I try, but these were just not very good and not very flavorful. My husband said they were very "eggy" and he's right. Even though there is just 1 egg in the recipe, the only flavor you can taste in this cookie is that of egg. The dough was nice to work with, though, and they aren't terrible, so I that's why I gave them 3 stars. I won't be making this one again, however. Thanks anyway.

Down Home Macaroni and Cheese

My southern born and bred hubby begs for this dish all of the time! I have made it for almost every holiday meal for the past three years because my family all demand I make it. lol It is super easy and delicious. I have made it in a lower fat method before by using reduced fat and/or fat free ingredients and whole wheat pasts noodles and it is still tasty, but not quite as soul satisfying!!

Yummy Pork Chops

This was good but the flavor is quite strong so be prepared! And despite really watching my chops they came out fairly dry. The cooking time as listed is too long, in my opinion. I used the leftover sauce to stirfry broccoli and THAT was DELICIOUS!! I might make this sauce again just to use as a veggie stir-fry sauce. Served it all over jasmine rice and my hubby liked it, but it wasn't his favorite of all time.

Chocolate Snowdrops

The Pros: Good flavor, simple recipe, inexpensive handy ingredients. The Cons: the texture is a little odd. I found these to be a bit chewy and "marshmallow-y." All in all good in a pinch, but not the best ever.

Greek Pasta Salad I

SO yummy!! I made this for a club get together and the ladies all loved it! Even better the next day. I used balsamic vinegar instead (because I LOVE balsamic :-) and garden tri-color rotini instead of the called-for noodles, because they are pretty and hold the sauce better. Great recipe! I will definitely make this again and again.

Easy Peach Cobbler

Here's the thing - my husband, a good ole' Georgia boy, LOVED this cobbler, BUT if I hadn't made the changes that I did he would have been really unimpressed. I doubled the quantity of peaches (used a 29 oz. can) and cooked them down with 1 tsp of vanilla and 1 tsp of cinnamon in a saucepan over medium high heat for a few minutes. This thickens up the sauce and distributes the vanilla/cinnamon nicely. Then I poured it over the crust mixture in a lightly greased 8x8 pan, sprinkled it with sugar and baked it at 350 for 55 minutes. It came out beautifully brown and perfectly baked with a lovely proportion of peaches to crust. So as a basis this recipe was terrific, but since it did need some adjustments I only gave it 3 stars.

Summer Corn Salad

This salad was pretty, light and tasty, but I felt that something was just a tad missing? I did make two minor changes in that I only added about half of a Vidalia onion rather than an entire onion, because it was quite large, and I used half white vinegar and half balsamic (for a little extra kick) Overall it was good, but not outstanding. I think next time I will try using cilantro and adding some lime to this for a more flavorful 'mexi-corn' version. :-)

Roast Sticky Chicken-Rotisserie Style

I have made this chicken many times and it has always come out very tasty and tender. I only do one chicken at a time, but I make and use the entire recipe of rub. Other than that the only difference I make is that about an hour into cook time I pour melted butter over the bird, and then halfway though the cooking time I flip it and do the same to the other side. Amazing results every time.

Blackened Chicken

Just made this tonight for the first time and thought it was very tasty! I followed the recipe for the seasoning mix exactly and the flavor of these was honestly just like you get at restaurants. The only reason I gave this 4 stars instead of five is because, like most other reviewers, I needed to cook my chicken much longer than the stated 5 minutes to achieve a center that was no longer pink. Other than that great recipe! I will be making these agin.
