Becky's Chicken Salad

The key to this salad is the fresh whipped cream. It allows you to use lots less mayo and keep a creamy texture. Seems like a nice base recipe as far as the "additions," but as you can see from the reviews the possibilites are endless. Our additions were walnuts, apples, onion, and date pieces. Overall a great recipe, but the fresh cream is what really really makes this good. Thanks Becky for giving us the secret ingredient to a good chicken salad!

Lighter Banana Muffins

This is my favorite new recipe!!! For a lowfat snack for kids, you can't beat it. I use whole what flour and they are terrific. I do recommend following others advice and adding some applesauce, maybe 1/4C to original recipe, it makes them a bit moister. Don't over stir or overbake! Also, try subing in one 15oz can pumpkin for the bananas. Today I made with 1 banana, about 1C pumpkin and 1/2C applesauce. Also added chopped nuts, dates and cranberries. The possibilities are endless. I may try sweet potato next. Great recipe!!

Upside-Down Orange Biscuits

These were really good. The "glaze" is very runny when 1st prepared, but the moisture cooks off in the oven and makes a nice gooey bottom. Will these make again!

Banana Pancakes I

When considering this recipe, think more along the lines of a potato pancake type recipe, not a traditional breakfast pancake recipe that has banana flavor. These are very mushy. I cooked them low and slow and then tried hot and fast. I tried pouring direct from measuing cup and then also spreading them out in the pan with a spoon. No matter what I did, they came out thin and mushy. Maybe there is too much banana in the recipe? Loved another reviewer's idea of mashing in a plastic bag first. You can get all the chunks out that way. At least that part worked great.

Cabbage Sloppy Joes

Great recipe. My family loves these. Once your eaters get used to the cabbage in there, you can make them even healthier by substituting more of the meat for more cabbage or even other veggies. ie grated carrot, bok choy or chard stems, squash, broccoli stalk, whatever.

Blueberry Pie

Delicious and easy!!! I did add the additional 2T of cornstarch others suggested and also a little lemon juice. Took advice of others and let cool overnight. It was the perfect consistency the next day. Not runny at all and quite delicious. If you're going blueberry picking, pick up a pie crust on the way home and make this simple pie. It's sooo good.

Baked Beans II

An easy and tasty way to dress up your standard can of baked beans. You cannot mess this up! I over baked mine and they were still delicious. I left out the bacon and they were still good, but bacon would make them even better. Thanks for a great recipe.

Banana Muffins II

These are delicious. The batter is just the right amount to fill 12 baking cups, if you fill them to the top. I am used to filling a baking cup only 2/3 full, so I was skeptical about filling them so full. I was pleasantly surprised when they came out perfectly. They are flatter than other muffins, but they are moist and super tasty. Another thing I should mention, mine were very done in 20 minutes. It could be my oven, but others may want to check sooner than the 25-30 mins.

Upside Down Pumpkin Cake

Got rave reviews. Even the kids under 4 liked it. One tip, definitely use unsalted butter. I only had salted on hand and the topping was too salty for my taste, even tho everyone else liked it. Also, don't try to flip this cake like other upside down cakes. The crunchy pecan topping is pretty in the pan and the pumpkin on the bottom is mushy.

Good Old Fashioned Pancakes

Excellent base pancake recipe. Many reviewers say this is too thick, but I found it helpful because then I could add wet ingredients to make it the perfect thickness for my family. I chose to add yogurt to thin it out for added nutrition and also a bit sour flavor. I gave 4 stars because the flavor is a bit bland. Again, this fact allows for personalization. Adding some mashed banana or vanilla would flavor them nicely. Replacing some flour with whole wheat could add some nuttiness. This is a versatile recipe. Also, Heatherene4572 gave some good advice in her review, cook at a low temp and no more mushy middle. Make this your own.

Roasted Garlic Cauliflower

Wow, and I didn't think I liked Cauliflower. We got some from our CSA, so I thought I'd try to cook it. I used this recipe since it was one of the few on the site with little or no dairy. In fact, I omitted the parmesan cheese, and it still came out fabulously. I may actually purposely buy cauliflower now. This was delicious and EASY!

Bum's Lunch

We thought this recipe was great. We used to call it Silver Turtles when we went camping, but we used hamburger patties. This is much better, and a new way to cook cube steak. I would definitely suggest adding salt and pepper and your favorite spices, especially to the meat. Another way to "jazz it up," as another reviewer said, would be to add some other vegetables. Carrots and bell peppers come to mind, one could even do squash and rutabagas. The possibilities are endless. Thanks for the idea, Katie Marie!

Blueberry Cream Muffins

I made them with vanilla yogurt instead of sour cream because we were out. They are delicious. I would recommend using a mixer if you're not up for a bit of lower arm exercise. It took quite a bit of hand beating, but was well worth it.

Apple Strudel Muffins

Because of a dairy allergy in our family I used canola oil instead of butter for the batter. Muffins were still moist and delicious. Also, I did not have time for the topping so I sprinkled with brown sugar. Thanks for a great muffin recipe!
