Texas Sheet Cake V

Okay, but a little more labor intensive than other recipes I've tried. I think using buttermilk makes the batter smoother. Using the sour cream left lumps of flour in this batter. I recommend using the buttermilk, since a liquid is easier to stir in. Sour cream made the batter more like a dough. However, this cake was still moist and had a good flavor.

Chicken Milano

My family loved this recipe!! I added a splash of white cooking wine to the pan drippings and broth before adding to the cream sauce, just because a friend recommended. I ALWAYS butterfly my chicken breasts and soak in 4C water with 1/4C salt and 1/4 sugar for 15-20 minutes in fridge before cooking. A trick I learned from America's Test Kitchen. Makes MOIST thin chicken breasts!!!

Simple Ranchy Breaded Fish Fillets

Very good. I used olive oil with ranch powder and crushed Ritz crackers. Turned out great. Husband is not big fish eater, but told me to do this again!

Giblet Gravy II

Our gravy turned out perfect!! We aren't fans of sage, so I left it out. I'm not an expert on gravy making, but in the absence of our mom at this dinner, this recipe performed perfectly!! Sorry Mom, the potatoes didn't miss you at all!! LOL

Cranberry Sauce I

I received great compliments on this dish, which debuted on our Thanksgiving table. I followed recipe exactly this time, but I did read reviews about 1/2 water and 1/2 OJ. I think I will do that next time. The sauce was very good, but VERY sweet.

Grandma's Green Bean Casserole

I tested this recipe on our Thanksgiving table. It was a very tasty alternative to the mushroom soup variety. I followed the recipe except I only used 2 cans of French cut green beans. I'm glad I didn't use more or the casserole would have been too dry, as we like the "sauce" of the dish. I will make this again, though no one actually made rave comments.

Old Fashioned Brown Gravy

I made this gravy using drippings from my chuck roast cooked in the crock pot. In order to make a rue with the right consistency, I used at least 6 tablespoons of drippings to the 2 tablespoons of flour. Otherwise, I followed the recipe for milk and water. The gravy cooked and thickened nicely. I'm giving 3 stars only because I was in a hurry, and had I not saved any more drippings than the 2 tablespoons called for in the recipe, I'd have been in trouble!! Will use recipe again, but more drippings.
