Grilled 'Fusion' Pork Chops

Reviewed: Jan. 13, 2009
We loved this recipe! I made changes for what I had on hand- lemon juice instead of lime and fresh ginger and garlic, and we broiled it since it was snowing too hard to grill outside. We ate it with some curry apple chutney a friend made for us, and it was amazingly good! It was also fast and easy to make, so bonus points there. Thanks for the recipe!

Pecan Sandies

Reviewed: Dec. 13, 2008
This is the second year I have made these for Christmas gifting. They are the best cookies ever! They make about one million cookies, so be prepared to share or eat a bunch yourself. This year I passed them out with homemade hot chocolate that I had flavored with powdered amaretto flavored creamer. I put about 1 1/2 T. of the creamer into the cookies as well and it turned out mighty tasty. Now if you'll excuse me, I have to go eat some more cookies...

Hot Cocoa Mix in a Jar

Reviewed: Dec. 13, 2008
This recipe was okay as is, but I thought it was a lot better with a few changes. I did the recipe as written, but using amaretto flavored creamer, and it was okay but not sweet or chocolatey enough for me, and a bit chalky. I dumped in a bunch more powdered sugar (3/4 to 1 c?), maybe 1/2 c or so more chocolate milk mix, and 1/4 c. more cocoa powder. That made it more flavorful and thick-tasting. The powdery taste was my own fault for not getting the water hot enough on my first taste test. I used much hotter water the second time around and it cut down on the chalky. With the changes I felt much better about giving this as gifts. The amaretto flavor was a tasty addition, and I think using the wal-mart brand chocolate milk mix made the flavor stronger like another reviewer had mentioned. Overall, it was tasty and worth making. Thanks!

Sweet Potato Gnocchi

Reviewed: Nov. 24, 2008
Yay for the dinner-saving gnocchi! I made this after discovering I had gotten sweet potatoes instead of russet... so chili baked potatoes weren't going to work anymore and I needed a new recipe fast. I had everything I needed to make this recipe, and it was really easy. We had it with alfredo sauce, but next time I may go with a less garlicky sauce, or possibly butter and parm. I thought it was easy enough to roll out like a play-doh snake and cut into pieces. Just keep flouring everything like when you make sugar cookies (your hands, the dough, the cutting board) and it'll work fine. My family loved it! I cooked about 1/3 of the batch right away, and froze the rest as dough (already cut into pieces) for later. Yay for amazingly delicious gnocchi!!

Easy Candy Yams

Reviewed: Nov. 2, 2008
This is the best yam recipe ever!!! I used canned yams, so there was no problem with undercooking them. I believe I used all the butter, but you don't really need to, it would be fine with less or none at all. I made these to take to Thanksgiving dinner last year, and have been asked to make them again this year. (High praise- this was for my in-laws, they are a tough crowd.) I did one pan with marshmallows, and one without. I like them better without. I used the thick caramel dip for apples (Marzetti's or something like that?) and it was easy and heavenly. I made more for myself afterwards and ate them like dessert. Thanks you for these yams o' goodness! One of my favorite recipes ever.

Mimi's Zucchini Pie

Reviewed: Aug. 4, 2008
Sooooooo good! My 5 yr old and 2 yr old ate it, too! (she said, completely stunned) I made some changes: I used all yellow squash, and grated it. (To hide it...) I didn't have an onion, so I used onion powder. I also nixed the tomato, and mixed spinach into 2/3 of it once I poured it in the pan for the grown-ups. I put cooked ground bacon-sausage on top, then sprinkled with the parm. I used a glass 8 1/2 x 11, same cook time. Thanks! We all LOVED it!

Baked Spaghetti

Reviewed: Jan. 29, 2008
This was tasty- a hit with the whole family, which hardly every happens. Only a few substitutions to work with what I had: cheddar, not mozzarella, onion powder instead of diced onion, and I didn't have cottage cheese so I softened some cream cheese and combined it with the shredded cheese. I layered the noodles, then smooshed on the cream cheese, then the meaty sauce and sprinkled the top with some more shredded cheese. Mmmm, cream cheesey noodles... ahhhghgh (Homer Simpson donut noise) Thanks for the recipe!

Chicken with Lemon Sauce

Reviewed: Jan. 4, 2008
This recipe is the best chicken recipe in the whole world! Okay, at least the best one I've ever tried. It tasted like it should have been served in a restaurant, not my house. I did everything like the recipe stated except for using the parsley, since I didn't have any. It was quick and easy, which made it even that much better. Thanks for sharing this super-kick-butt-awesome recipe!

Milk N Honey Bread

Reviewed: Oct. 8, 2007
Wow, I've never been the 1st to review before.... I didn't have whole-wheat flour, so I went all white flour. I also left out the walnuts for allergy reasons. The rest was the same as the recipe. The bread was good and easy to make. It's somewhere in-between sandwich-y bread and muffin-y bread. Moist and thick, but not as dense as zucchini bread, etc. The batter smelled amazing- just like honey-butter. Mmmm. The bread was really sweet but kind of missing something. It needs nutmeg or cinnamon or something more flavorful. Adding the nuts would have helped, too, I'll try pecans next time. I thought it tasted better after it had cooled. It was worth making, but if I make it again I will fiddle with adding something to up the flavor a bit.

Fluffy Peanut Butter Frosting

Reviewed: Jul. 2, 2007
This frosting was great! I made it for a chocolate-peanut butter cake, and everyone who ate it wanted the frosting recipe. It was plenty fluffy, I beat it a while like is says to. Mmmm, good frosting- thanks! Added afterward: The 2nd time I made this it got thick and sticky, like honey. I think difference was how much milk I added. It looked grainy when I began mixing, so I added more milk, and it made it sticky. More sugar helped a little. I think you just have to beat it for the 3 min. before you decide if you need more milk or sugar. (?) I will still use this recipe, though- I just have to figure out what made it work the 1st time and not the 2nd.

Corn Dogs

Reviewed: May 16, 2007
These corndoggers were awesome! I did some hot dog and some cheese-stick. The batter stuck fine, and I smeared it on with a spoon. I had to make some changes to work with what I had, though. I used a cast-iron skillet to fry in, and found that 350 degrees was too hot for the shallow skillet oil- I turned the burner down to just below medium. Since the oil was only deep enough in my pan to cover half the dog at a time, I think I'll put the skewers in post-frying next time and use tongs to turn them so the batter soesn't all fall to one side. If I turned them all the way around in the oil so each side was "set" before I browned them, this helped the batter not to slide to one side of the dog, too. I will make these again for sure, though-- they went over well with the whole family, and were pretty fast and easy! (Cooking them in the skillet only took about a minute on each side to get them done.) Thanks for the recipe!
