Slow Cooker Beef Barbacoa

This was simple and a terrific base for doing lots of other things :) I made it up last night, added a cup of corn after it was finished cooking, and wrapped it up with some cheese in flour tortillas to make chimichangas. Next time I do it, I'd like to add some chopped ancho or anaheim chilies to make it spicier. The texture came out perfectly and it was a terrific treat for supper. Thanks so much for sharing, lizbot!

BBQ Chuck Roast

This was great! We didn't have any beer on hand, though, so I substituted a mixture of 1/3 c A-1 steak sauce, 1/3 c ketchup, and 1/3 c balsamic vinegar for the beer. It was still really good, but I can't wait to try this again with the beer the recipe calls for instead. We also don't have a rotisserie, so had to cook it on the regular grill surface. Even with very frequent basting and movement of the coals so that they provided a more indirect heat, our roast didn't take nearly the two hours the recipe calls for. I'm not sure whether this is a factor of the barbecue or the method, but I can say that it's worth being judidcious and watching this roast carefully to make sure it doesn't get overdone. Terrific submission on the whole, though -- thank you so much for sharing it!! :)

Watermelon Summer Salad

This turned out to be absolutely fabulous -- a great refresher for the summer heat! We served it with a lovely barbecue of ours, and it was a terrific side dish. For those wondering, no, it doesn't keep well -- so make sure you don't make too much. Thanks for sharing!!

Dijon-Tarragon Cream Chicken

This was absolutely terrific -- and fast! I have another recipe from a book for a dijon-tarragon cream sauce, but it's far more complicated. This went together in a snap and it was wonderful :) I have to admit that like many of us, I was out of heavy cream and had to substitute half-and-half instead. While it wasn't as thick as a full-cream sauce would be, it was still terrific. I strongly suspect that this same sauce would be equally good over salmon. Since that's on the menu later this week....I'll let you know how it turns out. But thank you for sharing -- this was definitely something we'll do again ;D

Sour Cream and Horseradish Asparagus

Quick, easy and delicious, this was a terrific accompaniment to our beef roast! You were right about the broiling, for sure; our dish didn't take nearly the 3 minutes recommended in the recipe. This was great, though -- thank you so much for sharing it!!

Wow! This is rich!! An excellent idea, but I have to admit that I had to make a lot of changes as I was preparing this on the fly and didn't have a couple of the ingredients readily at hand. You've inspired me, though -- thanks for sharing!!

Filipino Beef Steak

This recipe was good, but strangely kind of bland. Personally, one of the things I'd like to try next time is to add a chili or two to it. I've also considered using orange instead of lemon juice and maybe adding a mango to the marinade as well. Thank you, Iola, for sharing it anyway! It will make a fine take-off point for further experimentation :)

Hot and Tangy Broccoli Beef

My husband and I tried this recipe and while it's good, it needs.......something. Fresh ginger? Orange peel? More garlic? More red pepper? We don't know. It's a keeper because it makes a reasonably good, quick meal, but not something I'd do up for company. Thanks to the author for publishing it, though :)
