Banana Crumb Muffins
Absolutely delicious! Very moist and extremely flavorful. Anyone who says otherwise must not know how to follow directions or need to get their tastebuds examined. They are definitely NOT bland! I've made these twice in in the past week. Made them in 2 mini muffin pans & 1 mini loaf pan (3 1/2" - 5 1/2"). Filled the muffin tins 3/4 full & the loaf pan 1/2 full. Didn't use salt either time. 1st time reduced the white sugar to 1/2 cup. They were purr-fect! 2nd time I made the batter without ANY sugar , still very good but not as flavorful as the 1st batch. I did cook these smaller muffins at least for the same amount of time as the regular size in this recipe, maybe a little longer until the edges were starting to brown and I could lift them out of the tin with a tooth pick. I think next time I will try these with a 1/4 of white sugar for the batter.

Three Bean Salad
I would rate this 6 stars = "can it get any better?" This recipe is definitely a "keeper" I made this yesterday with a few changes and got rave reviews from my friends. Substituted lima for garbanzo, medium sweet onion sliced thin for the green onions, medium green pepper chopped for the celery, olive oil instead of veggie oil and 1 clove garlic pressed for the powder. Didn't use onion powder or cayenne pepper. I would recommend to refrigerate it for at least 4 hours and flipping it over or stirring it several times while marinating, but overnite would be even better.
