Herb Rubbed Sirloin Tip Roast

Very tasty roast. This was my first oven roast (I normally do a pot roast in the crock pot) and it was very nice & tender. Great seasoning (rub is awesome)! I had some minor timing issues as I had a smaller roast than the recipe called for and was working with a convection oven, so next time I'll know enough to get it exactly as I want.

Cathy's Banana Bread

Very yummy! This mix also makes good muffins (I only had one loaf pan so I made muffins with the extra). But for muffins the baking time is only 20 minutes, so take them out well before your loaf if baking together.

One Bowl Chocolate Cake III

I made this for my son's birthday cake. FANTASTIC! I used the recipe as written and the cake was extremely moist and rich. I got so many compliments (it was incredibly tasty with white buttercream icing). This is now my go-to chocolate cake recipe! For cupcakes, 20 minutes is sufficient in the oven. They turn out wonderfully too!

Marshmallow Fondant

This was very easy! And the best advice I've seen by far (not sure if it was on this board or another) was to colour the marshmallow mix after adding the water but BEFORE adding the confectioner's sugar. This helped me avoid getting technicolour hands and ensured a nice even colour from the beginning, reducing the kneading required to work the colour in. In my case, I split my marshmallow, water & vanilla mix 5 ways and added different colours of die to each bowl. Then I added confectioner's sugar to each bowl separately. I also kneaded in a little extra confectioner's sugar, knowing I was making figurines, so they'd harden a bit.

Mouse's Macaroni and Cheese

This is almost exactly the same as my mom's recipe (which I lost and was looking to replace). I always add tex-mex seasoning, 1 tbsp dijon mustard and a little Frank's red hot sauce to the cheese sauce to liven it up. I'll also add 2 tbsp of tomato pesto if I happen to have it around. I like to take the lid off near the end to let the breadcrumbs brown.

Big Soft Ginger Cookies

Very tasty. And easy to make. I added lots of extra ginger (I like my ginger cookies spicy) and some allspice. My son can't stay away from them!!! :-)

Blueberry Streusel Muffins

Delicious! I made this using half blueberries and half rhubarb and 1 cup of sugar instead of 3/4. These muffins are very much like coffee cake and would also be good made with apple pieces (yum!) or black cherries.

Oatmeal Pancakes II

These were quite tasty. The texture is different but good. I reduced the oil to only about a tablespoon and added 1/4 cup of applesauce and some cinnamon. I also just used regular milk.

Nana's Apple Crisp

Yummm!!!! This was really easy and really good on the first try. I used Granny Smiths and did double the crisp mixture to make a pressed bottom "crust"and it turned out wonderfully. This will become a regular dessert item at our house for sure!

The Best Sweet and Sour Meatballs

This recipe came out perfect on the very first try!!! I took one person's advice and baked the meatballs in the oven on a cookie sheet rather than frying in a skillet and they were perfect and didn't break at all! Great advice! I substituted some Lipton's onion soup mix for the onion in the meatballs - gave it great flavour. I also made a few adjustments to the sauce - I reduced the amount of water, and only did 2/3 of the recommended amount of sugar, increased the amount of soy (accidentally doubled), used a combination of balsamic and rice-wine vinegar, and used cornstarch instead of flour. I also added garlic powder and ginger. I'm really happy with the way it turned out - nice and tangy!!!

Roasted and Curried Butternut Squash Soup

Outstanding recipe. I did make a few small tweaks but for the most part it stands as is. I didn't add the onions because I didn't have any on-hand. And I changed the liquids a bit as I used a small squash, so I used 3 cups of chicken broth and 1 cup of light cream. I also added 1 large cooked carrot to the puree. This was simply delicious and I'll definitely make it again!!!

Pork Chops for the Slow Cooker

Very yummy. The meat actually tasted like spare ribs with the sauce. I was actually in a rush and put them in mostly frozen and turned my slow cooker to high for 4 hours. I only did two large, thick-cut chops and they were cooked without a problem. However, next time I'd like to do them on low for 6 hours to see if I can get the meat to tenderize a bit more. All the same, a great recipe that I'll use again.

Zesty Slow Cooker Chicken Barbecue

YUMMMM!!!! I received this recipe in my "Daily Dish" e-newsletter yesterday and boy I'm glad I made it. It was very easy and so delicious!!! My husband raved about it and asked when we could have it again! Even my 21 month old son gobbled it up and asked for more. As for changes, I actually didn't have italian dressing on-hand because I usually make my own balsamic dressing, so I used the ingredients from the balsamic dressing instead (balsamic vinegar, olive oil and a touch of mustard). And for the Canadians in the group, I used President's Choice (Loblaws) brand extra spicy barbecue sauce and added a touch of Louisiana hot sauce to give it some kick.
