About this Cook
I am a mom of two elementary school aged boys. I am also wife to a wonderful husband. I work part time in an office. I love to be in the kitchen and I love feeding my family healthy and tasty foods! I also love to grow a vegetable garden in the summer, although here in Vermont, the growing season is kinda short. I love working out (to combat the weight gain from all the baking!), being outside, kayaking, fishing (we ice fish in the winter), and spending time with my boys!
My favorite things to cook
I love to bake and experiment with baking recipes. I have mixed results with my recipe changes. The changes are usually to make the recipes healthier. I love healthy cooking and baking. I have also recently begun using my crockpot and I am loving it!
My favorite family cooking traditions
Cookies at Christmas! My mom and I always made tons. I am continuing with my sons as they love to help in the kitchen. Also my mom's homemade bread. I still can't recreate hers!
My cooking triumphs
Birthday cakes for my sons. They have each had a special cake for each birthday, all handmade. There has been a racetrack, train, rocket ship, teddy bear, Darth Vadar...I love doing it and the boys get so excited! My husband and I recently made our first ever homemade donuts. It is was my first success at frying anything and they were so yummy!
My cooking tragedies
I have trouble frying things! The house always ends up stinking and the product burned!

Cinnamon-Raisin Coffee Cake
This was so yummy! I did make a few small changes-I subbed applesause for the oil and sour cream for the yogurt (I didn't have any yogurt) and I used about half whole wheat flour. I also doubled the topping. It was moist and delicious and the whole family loved it! I will make this again!

Sesame Noodles
These noodles are delicious! I only made a couple of slight changes-I didn't have any safflower oil-I used a total of 4 Tablespoons of oil-3 TBSP of sesame and 1 TBSP of olive oil. I also decreased the sugar to 5 TBSP and used a bit more chili sauce (we like it spicy here!). The sauce was so yummy-the perfect balance of flavors. I added some cooked chicken and red bell pepper after the noodles had a chance to marry with the sauce for about 10 minutes. The whole family asked to have this again!

Candy Bar Pie
I made this to use up some Halloween candy! I used chopped up mini-Kit-Kats, mini-Hershey Bars, and mini-Crunch bars. I used fat-free cream cheese and light Cool Whip. A little peanut butter added in and a tasty, quick dessert that used up the last of the Halloween candy! Everyone in the house loved it! YUM!
