Dairy Free Chocolate Pudding

Very good...the best non-dairy pudding I've tasted! We used coconut milk, and the amount of 'milk' the recipe called for was exactly the same amount that was in the can, so it was super easy! I did up the vanilla a bit, since we like vanilla here. I used a full teaspoon. Seriously yummy. The trick to making it not clump is 1) whisk it like crazy when you add the cocoa powder, before adding the cornstarch mixture, and 2) add the cornstarch mixture slowly while whisking, and don't stop whisking after you add it. It will thicken up very quickly. Don't heat it for too long after you add the cornstarch, just long enough to thicken a bit.

Chicken Stew with Dumplings

I usually hate it when people change a recipe and then rate it, but I didn't have bone-in thighs, so I used boneless and added them to a ready made chicken broth instead of making my own broth with the bones. I simmered it for about a half hour, and then added the veggies. It worked out wonderfully! I did everything else the same. It was for some reason much better than my regular chicken soup. Even the picky 5 year old ate everything in her bowl.

Easy Pancakes

For anyone not too experienced in the kitchen, take note: This recipe makes only about 3 large pancakes. You will need to double it if you are feeding more that one or two people. It is a very good recipe, though. I was looking for an easy pancake recipe that wasn't too hard to do first thing out of bed. This is it! I followed the other reviewer's recommendations and decreased the baking powder to 2 TEAspoons, and added a bit of vanilla. I toss it all in a large mason jar and SHAKE. then I just pour it into the pan. Perfect every time.

Great Easy Waffles

This recipe really did make great tasting waffles. However, I gave it 4 stars because I came looking for something I could make just after stumbling out of bed (thus EASY), and this is NOT it. I suppose I should have really read the instructions before attempting it, so it's kind of my fault. They really are delicious, but easy they are not.

The Best Rolled Sugar Cookies

I'm not sure what I did wrong, since there are so many great reviews, but these cookies were awful to me!! We made them for my daughter's halloween party, and were going to make pumpkins and ghosts, but the dough was so hard to work with, and by the time it softened enough to roll out, it was too sticky. I tried to only work with a small amount at a time, but it still got too soft too quickly. So, I glopped them on in lumps onto the cookie sheet, squished them a little, and decorated them with colored sugar instead. Once they cooled, I figured they would taste pretty good, but no. They taste like flour and baking soda with colored sugar on top. I followed the recipe and instructions exactly, giving them about 3 hours in the fridge before trying to work with them. The only thing I did was halve the recipe, but I checked and double checked the measurements, and I measured everything right.
