Classic Bran Muffins

I made these for my mom and my brothers couldn't get enough of them. I substituted canned pumpkin for the oil and added chopped apple and chopped walnuts. I used All Bran cereal for the wheat bran and added lemon juice to regular milk for the buttermilk.

Lemon Pepper Pasta Seafood

Very delicious. I used thin wheat spaghetti and added some roasted yellow pepper, onion and celery when I sauteed the garlic. I also added some wine ( I used a mead we had on hand). I used some frozen salad shrimp and some imitation crab for the meat. I was afraid the pasta would be dry, but the oil (I used olive) and wine were enough sauce. I agree with a previous review that is was much lighter than a creamy sauce.

Cucumber Sandwiches I

These were delicious. I was looking for a simple recipe for a bridal luncheon and these were perfect. I had trouble finding the cocktail rye bread so I quarted whole slices of rye.

Baked Potato Soup

The soup was great. I would follow the others advice and cook it in a crock pot. It took longer to cook on the stove than stated in the recipe in order to get the potatos tender. Cooking it in a crock pot should give the potatos plenty of time to cook.

Chicken Enchilada Soup I

My family loved this! They are already ashking for more. The tortillas do get mushy, I thought I had done something wrong, but it turned out great! I used leftover turkey instead of chicken and added more broth. It is spicey, and I left off the jalepenos!

White Chicken Enchilada Slow-Cooker Casserole

This is my families new favorite dinner. I used Pilgrim Prides Eat Well Stay Healthy lime chicken breast. They are precooked so you simply heat them up in the mircowave and chop them up. I also substituted Rotel, drained, for the green chili's and used jalapeno sour cream dip for 1/2 the sour cream and added a can of black beans, drained. The tortillals will get mushy if you leave it in the crock pot too long.
