Empanadas

This was one of the best tasting and easiest new cookie recipes I have ever tried. I made them for a party and everyone loved them. I put in a little peanut butter and chocolate chips to make a change and it worked wonderfully just like the preserves.

Morelos Salsa Verde

Very good, Very easy salsa to make. I had never used tomatillos before and this recipe was very easy to use the tomatillos I received in. I used it as the sauce for chicken enchiladas and they were very very good.

Slow Cooker Italian Beef for Sandwiches

This was awesome. I made this as a quick meal for Christmas Eve since we were going to be on the run. I bought a 3 pound piece of meat and cut it in half (froze the remaining half for later) since I was only making this for the two of us. It was really good. We used hoagie buns and I bought provelone cheese and broiled it on top of the sandwiches before serving. I also used some of the cooking juices as an au jus. My husband loved it.

Four Cheese Macaroni

We love this recipe at my house. I have used Rotini and whole wheat pasta as well which make it have a little different taste. I also use whatever four cheeses I have on hand (usually sharp and mild cheddar, colby, and monterey jack cheeses). My family loves this recipe we have it at least once a month.

Chocolate Mint Dessert Brownies

I made this for a work party and it was a huge hit. You need to be prepared to spend a little time on them though since they do have three layers and a little wait time between making each layer.

Bacon Wrapped Smokies

These are gone within minutes every time I make them. My husband loves for me to make these for parties we go to and they are a must for our Superbowl party every year. I use Honey Maple Bacon that way it gives it a little more flavor. I also tried the Turkey Smokies last time and they were really good as well but have less fat and sodium than the other types.

Sparkling Punch

Made this for a church dinner and it was gone before the first wave of people went through. I made a double batch as many others suggested and it was still gone really fast. Instead of regular ice cubes I made lemonade ice cubes with maraschino cherries in them. I used one can frozen lemonade, the juice from the jar of maraschino cherries, and 1 1/2 cans water poured into three ice cube trays and put at least one cherry in each cube. It really added some nice color and they also kept it cold without watering it down.

Pasta Salad

Great basic recipe. I used the recommended amount of seasoning, dressing, and pasta, then added in grape tomatoes, small sweet peppers (yellow, orange, and red), mini turkey pepperoni, and feta cheese as well. It was a big hit with the party I took it too and my husband, who isn't usually a big pasta salad fan. Thanks for sharing.

Banana Peanut Butter Bread

I made this recipe into mini muffins and it was awesome. I used 3/4 Cup creamy PB and 1 3/4 Cup Flour, I also added 1 tsp vanilla as was suggested by others. I baked the muffins for 15 minutes at 325. My kids ate them up and I thought they were a great treat as well.

Grilled Chicken and Angel Hair Pasta

Chicken Enchiladas with Creamy Green Chile Sauce

Good recipe to start with. I made some changes though and really liked what I ended up with. I used a mix that replaces the condensed soup that is much lower in sodium than any condensed soup (1/8 & 2/3 Cup milk, 1 1/3 Tbsp Corn Starch, 1/2 Tbsp Instant Chicken Bouillon, 2/3 tsp dried minced Onion, scant 1/4 tsp Italian Seasoning: Combine with 1/4 cold water whisk until well blended, cook on stove top or in microwave until thickened, then use just as you would a can of soup). I also added a 1/8 cup of jarred salsa verde to the sauce to give it more flavor as well.

Slow Cooker Carolina BBQ

This is a great way to make pulled pork in the winter time. I really like the bite of Carolina pulled pork, but my husband likes the sweet barbecue sauces of the midwest. I compromised with this recipe. I cooked the pork according to the recipe and then added a cup of Sweet Baby Ray's barbecue sauce to the shredded pork before serving. It was very good and my husband said he would definitely eat this again.

Holiday Cranberry Chutney

This was very good. It does make a ton so you can definitely freeze some for later or give some away. I usually prefer my chutney's to have a little spice to them so next time I may add some chipotle sauce or something else to give it a little kick. It was very good though, I even served some graham crackers with it and it was like a desert type cheese ball that way.

Spicy Beef Vegetable Stew

This was quite good. My husband really enjoyed it as well. I did not have diced tomatoes with green chiles so I used diced tomatoes with sweet onion and used the called for amount of pepper & added a dash of cayenne pepper. It was very good and I will definitely be making it again.

Bacon & Eggs Spaghetti

We will definitely be eating this again as my picky 2 year old even liked it. This was really good but I would make a few changes next time I make it. I added 1-2 Tablespoons of milk to the mixture in order to help with the cheese melting and to make it a little creamier. I also added around 1 tsp of fresh ground pepper to the eggs when I scrambled them. I will add a dash or two of cayenne pepper to the eggs next time around to give them some body. I added tabasco to my portion at the table but it is a little strong for my hubby. I also followed the recipe for the velveeta, but added about a 1/3 cup sharp cheddar cheese as well.

Buttercream Frosting

This was a good recipe and tasted great to me. I sifted the sugar before beating it into the butter and it did not taste grainy to me. My only complaint was I made this for my son's August birthday and it melts fast so keep the cake or cupcakes refrigerated until serving or it will melt pretty quickly on you in any heat.

Spaghetti Squash Dip

This was okay, but I was really hoping for something with a little more flavor. I agree with other posters that it needs some extra seasoning. If I make it again I will definitely try the taco seasoning packet or maybe another type of seasoning packet (like Italian dressing) to give it a more rounded flavor.
