I'm a vegan. 17 years young. Been a vegan for almost 3 years, vegetarian for almost 4 1/2. hmm...what else? My favorite things to cook
Hmm... I like baking, vegan desserts are a specialty of mine. I'm an extremely picky eater, so I basically try to reinvent my favorite recipes from childhood, only vegan. lately i've been on something of a coconut kick...whipped coconut cream, coconut pudding, all kinds of stuff.
My favorite family cooking traditions
my mom's pumpkin spice muffins for thanksgiving/christmas were pretty good when i took out the eggs and dairy and stuff...
My cooking triumphs
I basically recreated a muffin recipe, really only using the original as a guide for the dry ingredients and for the total amount of liquid, they're pretty freaking amazing.
My cooking tragedies
one time i made brownies... followed the recipe... they had so much grease that they were really not even solid. ewww. and the one time i followed a muffin recipe to the letter, they turned out absolutely disgusting. go figure.

Sara's Awesome Pumpkin Bread
amazing. i reduced the sugar a tiny bit and added raisins and used apple sauce instead of oil.

Mom's Zucchini Bread
First I have to say, I really don't like zucchini much. This bread was great though. I used ground flax mixed with water instead of eggs and raisins instead of nuts just because i didn't have any walnuts on hand. Even my little brother loved it, although I had to tell him the green specks were from granny smith apples to get him to eat it...haha. Definitely a hit though, I'll be making it again.

Janine's Best Banana Bread
this is amazing banana bread. i'm a vegan so i replaced the butter with a vegan margarine and the egg with some extra mashed banana and a pinch of baking powder. i also used half whole-wheat flour. i did have to bake it for a little longer because of the extra banana making it so moist, but it came out very nicely anyway.
