Addictive Sweet Potato Burritos

These were pretty good. I used goat cheese instead of cheddar (I think it goes better with sweet potato) and tossed in some cilantro for freshness. Next time I will add some fresh onions before I make the burritos for texture.

Wasabi Mayo Salmon

Delicious and very easy - had all ingredients on hand. Did not have chips so I used panko instead. Also- used wasabi paste and cut down on the mayo.

Breaded, Fried, Softly Spiced Tofu

Excellent and easy! I Did make a few minor adjustments - omitted soaking in the broth. Instead dipped the tofu in egg and rolled in breading. (I added some onion powder to the breading.) Make sure to fry long enough to crisp the outside. I served it with the ginger dipping sauce from this site. Delish!

Honey Mustard Tofu

Chocolate Chocolate Chip Cake Cookies

Really good. Great the next day and stay soft! I used regular salted butter (I cut out a little of the kosher salt) and omitted the nuts- still great. Don't let these over cook! 11 minutes is just enough, let them finish on the cookie sheet outside of the oven for about 2-3 minutes.
