Jamie's Cranberry Spinach Salad

This was a hit! Skipped the onions, reduced the sugar and used roasted & slivered almonds found in the salad aisle. Couldn't be easier.

Layered Chicken and Black Bean Enchilada Casserole

Very good and won rave reviews from my 12 year old. I did have to change a few things...used flour tortillas instead of corn and didn't use the green chilies. Oh, and I used a taco seasoning pack instead of the other seasoning because it was easier. Great flavor will definitely make this again!

Make-Ahead Mashed Potatoes

Delicious! This cut down on so much hustle right as the turkey was coming out of the oven that I don't think I can ever go back to regular mashed potatoes. Thanks!

Snickerdoodles III

Very yummy! I made several batches and used prior suggestions so that by the final batches I felt I had the perfect cookie. I flattened the cookies just a bit with a spatula (this made for a much more presentable cookie) and reduced temp to 375 at 9 minutes. I also tried both rolling the entire cookie in the sugar mixture as well as only the top of it and by far I felt that rolling the entire cookie was much better. I also used parchment paper on all batches and was very pleased with the end result. Thanks for all the suggestions!

Iowa Pork Steak

This was edible by all but loved by none. The sauce was not good...IF I make again I will cut down the onion soup mix by half or eliminate altogether. The meat was nice and tender though.

Very good...hubby and kids loved it. I substituted evaporated milk for the half and half and used mozzarella instead of swiss and it was still good. Will make again (with spinach next time too.)

Artichoke Chicken

Delicious. Followed other suggestions and used fresh spinach, fresh mushrooms and used 1/2 mayo and 1/2 sour cream. Did have slightly too much of a mayo flavor even with adjustment so will probably increase the sour cream next time.

Chicken Tortilla Soup I

Loved this! It's so quick and I had all the ingredients on hand(except hominy, which we don't eat anyway) so no shopping necessary. Added a little cayenne pepper and dinner was served.

Easy Taco Casserole

This was not very good, however I think it's because I used salad dressing as the recipe called for. IF I make this again I'll use sour cream in the mixture instead. Kids enjoyed it, however.

Chicken Rice Casserole

Great recipe...the kids and husband thought it was great as well. I had to do a lot of tweaking due to not having all ingredients. I used fresh mushrooms instead of canned, no celery, no waterchestnuts, cream of mushroom soup and ritz crackers. Turned out great! I'm adding this to my recipe box.
