Chicken Stuffing Bake

Very good basic semi-healthy comfort food. I had to change ever so slightly just due to what I had available, but I will make it again "properly". I used cornbread stuffing (since the recipe didn't specify), which I really enjoyed. I sauteed a few mushrooms & threw them in, since I had them. I did NOT cook the broccoli first, as I like my veggies crunchy (plus, it was a nice contrast to the smooshy stuffing). Used about half the amount of cheese, but had to use light old cheddar. Still, a great recipe.

Spinach Marie

A very good way to do spinach, but next time I will probably throw in some swiss or feta. Threw in some bacon as another reviewer suggested & it made for a tasty surprise in each forkful.

Chicken Florentine Rice Casserole

Surprisingly good & easy. I didn't use all of the individual spices, but used Italian seasoning instead since it had the same stuff in it, plus a bit more. Will definitely make again, it was a real hit!

Amish Breakfast Casserole

We fixed this for Christmas breakfast & it was a real hit. Will definitely make again, but with more bacon (only had about a half a pound). The only problem was that it wasn't a recipe that could be made ahead & popped into the oven in the morning. Only real change that I made was I cooked it at 450 for 20 minutes & still let it rest for 10 minutes. Worked perfectly (at least in my oven).

Brunch Enchiladas

VERY GOOD & ONLY MADE SLIGHT MODIFICATIONS : NO GREEN PEPPER, ADDED SEASON SALT & CAYENNE PEPPER, AND MORE HOT PEPPER SAUCE. ALSO USED WHOLE GRAIN INSTEAD OF WHITE FLOUR TORTILLAS (BETTER FOR YOU & MORE CHEWY INSTEAD OF MUSHY). VERY GOOD & EASY. WILL MAKE AGAIN.

Salsafied Chicken and Rice

Salsa Chicken Rice Casserole

We loved this recipe. Only made a few minor changes : 2 cream of chicken soups (low fat), cooked the chicken in a frying pan with some onion, garlic, & season salt, used medium salsa. Will definitely make again & again. Only thing for others to note, you must use 4 cups of cooked rice as opposed to uncooked measure of 1 1/3, these are not the same amounts. Thank you so much!

Swiss Cheese Scramble

Potato Chip Chicken Casserole

Easy & a bit different. Overall, not a bad recipe, but it could use a little more flavour. I added some cayenne & tabasco for a little more kick. Will try it again, but make some adjustments. Thanks!

Ham and Cheese Bowties

Excellent comfort food. Only made a few minor changes : used cayenne instead of black pepper, used cheddar (that's what we had), added conflake crumbs with the Parm on top, garlic powder (no fresh on hand) & onion powder. Also, I added a bit too much flour so my sauce was too thick, used a bit of chicken broth to thin it. Easy & fast. Thanks!

Soy Sauce Chicken and Rice

Very good taste for minimal effort. I cut up & precooked the chicken with the onions (& some garlic). Added extra rice & water to compensate. Since the chicken was already cooked, I was able to cut the cooking time nearly in half. I'll probably add diced water chestnuts instead of the celery next time for a bit of crunch. Thanks!

Charleston Breakfast Casserole

Very good & the eggs weren't too heavy like some recipes. Saved a bit of fat & used low fat cheese & skim milk. Next time, I'll probably omit the margarine as well, it didn't seem necessary. Much tastier recipe than I thought, but I did use garlic croutons & added some tabasco.

Sucre a la Creme

My whole family grew up with this (although we call it Sucre Creme), since my dad's family is French Canadian. My grandmother always made this on the stove. Trust me when I say that you will either love it or hate it. Sometimes she would throw in a few chopped walnuts, but usually we enjoyed it plain. Also, sometimes it wouldn't work, or sometimes on purpose, she would have it runny (about the consistency of honey) to put onto toast. Man, this stuff brings back memories & it is so delicious!

Ham and Cheese Breakfast Casserole

I love this recipe for it's effortlessness. If you can make a sandwich, you can make this. May be a bit bland for some people. It can definitely be spiced up a bit with the addition of tabasco sauce or cayenne. You can also use sharper cheeses &/or lots more ham. Also, I always use about a tsp of dried mustard. Still, a great base recipe.

Quick Quiche

This is an excellent standby meal. I have made it with ham & cheddar, shrimp & mushrooms, and even a greek version with shrimp, feta, & spinach. All of them were awesome! This recipe always gets rave reviews. I even save a bit of fat & use skim milk, but you certainly can't tell the difference. A very useful recipe!

Mushroom Pork Chops

I have to say that this is one of my favourite recipes! I have been making it for years & never get tired of it. I do however use more garlic. Also, sometimes I'll throw in a shake of chili powder or cayenne to kick it up a bit. A major comfort food, especially with rice. MMMMM

Crab Dip

I liked this recipe because it had way less mayo than most of the others. I did follow the suggestions of others & used real garlic. I also used cayenne instead of pepper & added a bit of Fr*nk's Red Hot for a bit of kick. Also mixed in a ton of medium cheddar. The girls practically licked out the bowl! Thanks
