Winter Energy Cookies

My husband is not a breakfast eater...but I can get him to take a couple of these "energy cookies" with him in the morning. Eating something is better than nothing. These cookies are great!

Slow Cooker Fruit, Nuts, and Spice Oatmeal

Needs some sweetness...I sprinkled with brown sugar and drizzled with honey. Put on warm setting overnight and it didn't burn. May make again if I need to have something pre-prepared.

White Chili with Chicken

Very tasty! I added extra chicken, garlic powder + fresh garlic, green bell pepper + canned green chilis. I also doubled the cornstarch mixture...1/4 cup cornstarch + a little under 1/2 cup water...this helped thicken it up nicely! Will definitely make again!

Pop Art Cookies (Cookie Mix)

These are delicious! You'll have to flour the dough and rolling surface quite often, as the dough still remains kind of sticky even after the extra addition of flour. I recommend buying the cookie pop sticks that you can get wherever cake decorating supplies are sold. I made these for Mother's Day, put them in little flower pots and they were a hit! Will definitely make again :)

Chewy Chocolate Chip Oatmeal Cookies

I reduced the brown sugar to 3/4 cup, non-packed. I also used 1/2 cup of whole wheat flour + 3/4 cup all-purpose flour to increase the whole grains. I put the dough in the frig to chill for about an hour before baking--they turned out perfectly...not too flat and perfectly chewy. I would definitely use the old-fashioned oats for really chewy cookies (using instant oats would probably decrease the chewiness). These were yummy. Everyone calls them granola bar cookies b/c they're so oat-y. Yum!

Pumpkin Chocolate Chip Muffins

These are yummy and very satisfying. Pumpkin is very nutritious, so I don't mind "splurging" on these muffins :) I used 1 1/2 cups whole wheat and 1 1/2 cups white flour and added a few extra chocolate chips. I also reduced the sugar to a heaping cup full...and the muffins were perfectly sweet. This recipe made more than 24 muffins for me...more like 30.

Cocoa Oatmeal Cookies

These are soooo good! I substituted a little over a cup of chocolate chips for the raisins, and I did 1/2 cup whole wheat flour + 1 cup white flour. Butter is a MUST in this recipe--it really "ups" the richness of the cookies. This is an easy cookie recipe to make and I will definitely be baking these again!

Crustless Spinach Quiche

This was pretty good. We thought it had too much spinach and not enough egg. I might add an egg and go down a couple ounces on the spinach; adding a red pepper gave nice color. Adding herbs to this recipe for flavor was good too (basil, oregano).

Karen's Baked Banana Stuffed French Toast

Really tasty. I used a wheat french loaf for some whole grains. I also spread some peanut butter on half of the batch (to accompany the banana)--this was also really good!!! I would definitely make this again.

The marinade is great! The honey really makes it tasty and allows the meat to get carmelized. Any veggie-meat combo is good...I used chicken, small sweet pepper halves, and sliced summer squash and zucchini. Great on the grill!

Duck Breasts with Raspberry Sauce

Made this for Thanksgiving. I wasn't too fond of it, but it got reviews from everyone else. I think my dad ended up eating about half of it! There's lots of leftover sauce, so plan on that.

BAKER'S Easy Chocolate Truffles

Rich and fun to make. We rolled the truffles in rainbow sprinkles, coconut, nuts, and mini chocolate chips. Time consuming to make...so plan on making a morning or afternoon of this recipe!

Spicy Baked Sweet Potato Fries

Yum! I used a Pampered Chef southwestern seasonoing in place of the taco seasoning. I also used olive oil instead of canola...I'm sure either works. I cooked these in a 375 oven for 45 minutes and they were done...check them periodically to make sure they don't burn!
