Banana Cake IX

Reviewed: Oct. 25, 2006
I tried this recipe and it was just okay. It did take 30 minutes to bake it and it was easy to put together. It was a little too dry for my taste. I also used a smaller pan so that it wouldn't be so flat. I frosted it with cream cheese frosting and cut it into squares. I served it at work and no one complained. So it passed the test.

Sofrito

Reviewed: Oct. 13, 2006
Just an idea to save time when cooking. I make my sofrito in bulk and I freeze it in ice cube trays. I have trays dedicated to do just this. Once they are frozen I bag them and keep them in the freezer. When ready to cook I pull out one or two cubes (each cube should be about one tablespoon). Freezing it will preserve the flavor and it will last longer. I learned this from my mother and it really works well. When I make my bulk I share with my daughters and they do the same with it. I don't add salt to the sofrito recipe until I am ready to cook. Happy cooking!

Garlic Cheddar Chicken

Reviewed: Sep. 15, 2006
I cooked this chicken for my office luncheon and it was a hit. I followed the recipe but I baked it for one hour. I served the chicken with oven baked red potatoes with garlic and parmesan cheese. Umm umm good!

Beefy Baked Ravioli

Reviewed: Aug. 31, 2006
This was a very beefy dish. It was easy and rather inexpensive to make. My family are still crying for more.
