I found this recipes in an allrecipes magazine and this is by far one of my favorite recipes to make. I've used it for dinner parties, to make for friends, and just to enjoy for myself.
I have a gluten intolerance and corn tortillas and I just don't do well trying to fry them like a chimichanga, so I changed the recipe a bit. I make the chicken mixture, spread it in a 9x11 pan, top it with cheddar cheese, pour the sauce over then heat it in the oven at 325-350 for about 20 minutes, then top with sour cream before serving. Yummy!
