About this Cook
I'm a 5-12 grade band and music teacher in Cabool. I went through a year being unable to keep food down, after 12 doc's and the Mayo clinic, I was diagnosed with irritation induced asthma and either a gluten intolerance or celiac disease. This means that I finally got to exploit my interest and enjoyment in cooking because I can't eat a lot of things unless I cook them. I'm able to handle gluten in small doses and love cooking, besides the fact that living alone allows me to cook for my friends and fellow faculty and they love it.
My favorite things to cook
I love to cook just about anything. I'm finding that I lean more towards mexican or italian dishes, those seem to be my favorites. I'm also trying to learn more about sauces...it's all in the sauce.
My favorite family cooking traditions
It's really simple, but when I was younger my dad was a truck driver and on the road a lot. About once a month, my Mom and I would have a nacho night and/or a reheat night. For nacho night we'd take a huge bowl, dump a bunch of goodies in the bowl and rent a movie over our yummy goodness. With reheats, we'd set up a buffet on our kitchen table, maybe invite my 'grandma' over from next door and have reheats!
My cooking triumphs
So far my favorite, is a so not gluten free experiment with wontons with a tuna, cream cheese, red pepper, and garlic filling. I know it may sound weird, but it's what I had and it was wonderful!!!
My cooking tragedies
Gluten free white cake - NEVER again!!!! A stroganoff recipe that was horribly salty and essentially inedible.

Righteous Raspberry Brownies
I used dark chocolate cocoa and butter (rather than margarine). I was worried the butter would affect the texture, but wow, these were amazing!!! My husband responded that I could make these anytime I wanted. :)

Peppered Shrimp Alfredo
I love this recipe! This is one of my new husband's favorites! Super easy! We chose to leave out the mushrooms. I have used homemade alfredo and canned alfredo. Canned is so easy for a quick meal!! And still tastes great! (Can't even really tell it's canned!)

Chocolate Chocolate Chip Cookies I
I made the recipe as is only with white and dark chocolate chips and then chilled for about 30 minutes before baking. Wonderful cookies!! Everyone at work was also very pleased. :)
