Downeast Maine Pumpkin Bread

Just made this recipe with the result of 2 full loaves and 1 small loaf. I reduced sugar to 2 cups (mixing white and brown) and it has just the right amount of sweetness. I reduced the oil to 1/2 cup, and added 1/2 cup applesauce. Also added vanilla and more pumpkin pie spice. Other than those minor changes, I used the recipe and love the moist yumminess!

Ethiopian Cabbage Dish

I love this dish in Ethiopian restaurants, and was so happy to find this recipe. This is DELICIOUS and SO easy! I doubled (or more) the spices and added minced garlic with the onion. I also cut the oil in half. I will buy and add ginger next time.

Okra, Chicken and Rice Casserole

My husband and I LOVED this recipe. Not only is it delish but it took me 5 mintues to prepare, only dirtied a measuring cup and a casserole dish, and took one hour to bake. I even used frozen chicken breashets! Towards the end of baking I did cut up the breasts to get more flavor. I also used 1.25 cups water.

Butterscotch Bread Pudding

This is extraordinarily DELICIOUS! I made this for my parents and they just loved it. I did cook a little longer to achieve the crispy coating. Also cut down on the sugar and it was plenty sweet. Next time I will try with cinnamon/raisin breat - this could be used as a breakfast dish.

Coconut Cake III

I made this for Easter dinner and it received great reviews. I toasted all the coconut used in the frosting and used just half the sugar (it is plenty sweet). I added 1/2 cup crushed pineapple to the batter, and used cream of coconut instead of the oil. I baked in 2 9" pans and just frosted in between the layers and on top, adding cherries for decoration. This cake is yummy and very moist, but VERY sweet!

No Bake Peanut Butter Pie

Where has this dessert been all my life?!? I made this for Easter dinner and it was a hit. I used a chocolate graham cracker crust and decorated the top with chocolate syrup. It is best served just slightly thawed. This is a fast, easy and economical dessert - cost me about $5 to make this.

Grandma Johnson's Scones

I made these for a baby shower tea party and they could not have been more perfect for the occasion! I can't believe I've never made these before, I love them! I omitted the raisins, and made 3 versions: chocolate chips, dried cranberry with vanilla extract, and orange juice. For each scone, I scooped about an ice cream scooper-size onto the cookie sheet instead of cutting (I prefer the random look, and the crispy edges that are achieved this way). Delicious and perfect with a cup of tea.

Curried Chicken Tea Sandwiches

I made these for a baby shower tea party and loved them! I would add more curry powder next time around. I did omit the lettuce. I covered them with bread instead of open-face to keep them fresher longer at the party. Delicious!

Petit Pain Au Chocolate

I made this for a baby shower tea party and it was a hit - and insanely easy! I made my version even simpler - I only used Hershey candy bar squares in the middle. I also made smaller servings by cutting each pastry sheet into 12 pieces. On the outside after brushing with egg I sprinkled sugar on top.

Carrot Cake III

This was a simple cake to make and is absolutely delicious! I followed some of the previous suggestions and did the following: (1) Used 1 cup white sugar, 1 cup brown sugar (2) Added 1/4 tsp nutmeg (3) Added an additional 1 tsp vanilla (4) Added 8oz drained crushed pineapple. I hand-grated the carrots for large slices. I also purchased a jar of ready-made Betty Crocker cream cheese frosting to hurry the process! I suggest frosting the pieces as you serve them, so you don't have leftover cake with the cream cheese frosting sitting on it. Then you can store the frosting in the fridge and frost as you eat for a fresher taste. Enjoy!

Easiest Eggplant

I was skeptical about eating eggplant, but my husband and I LOVED this recipe! It was moist, simple, and delicious. We followed the recipe but added some fresh rosemarry and a little garlic salt. Yum! Also, eggplant has only 20 calories in a cup, can't beat that!
