Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Jan. 3, 2007
I loved the vinegar taste. If you like balsamic, you will like this dish. The chicken didn't take up enough of the flavor though. Maybe I should have pounded them thin.

Cream Corn Like No Other

Reviewed: Jan. 4, 2007
I made this for Christmas dinner. Everyone loved it. Left out the butter (I just forgot) and used half and half and 1% milk. It was still really rich, I just had to cook it longer for it to thicken up.

Day Before Mashed Potatoes

Reviewed: Jan. 4, 2007
Hmmm, maybe I'm missing something, but this was way too dry for my taste.

Quick and Easy Chicken Noodle Soup

Reviewed: Jan. 16, 2007
I've made this twice and both times were delish! I used 1/8 cup "Better than Bouillion" and 7 cups water in place of the broth. I used whole wheat egg noodles and I highly recommend them. Everything else I just guestimated based on how much of what I like in my soup. I love it! You can't go wrong.

So easy and so good. Just shred the chicken and you've got a dish that will please the kids and the hubby.

Chili-Lime Chicken Kabobs

Reviewed: Feb. 11, 2007
We made this with chicken tenders over rice. It was so yummy! It would be even better as kabobs but we didn't have all the ingredients. 5/21/07 I made it again as kabobs and it was amazing. I don't like chicken breast that much because it is usually dry. But this was moist and I couldn't stop eating it. I'm hooked!

Hearty Ham Casserole

Reviewed: Mar. 4, 2007
Really yummy, but mine was more like a soup than a casserole.

Whole Wheat Beer Bread

Reviewed: Mar. 4, 2007
Oh my gosh, I don't know what I did wrong. Maybe it was my choice of beer (I used a brown ale.) Sorry, but I did not care for this. Actually, I think my whole wheat flour was probably rancid. It only lasts 2 months in the cupboard. Make sure yours is fresh and maybe use a lighter beer so yours doesn't end up in the trash like mine. I will probably try this again soon because it sounds so good on paper!

Baked Pork Chops I

Reviewed: Mar. 4, 2007
These were restaurant quality pork chops. I used cream of broccoli soup (the only Campbell's cream soup I could find with out MSG.) (Be careful if you are adding extra cans of soup-the sodium content is really outrageous.) These are the pork chops I've been trying to make for years. Yummy!! I've made this 4-5 times and it gets better every time. I used Marsala wine this last time and it worked just fine.

Roast Chicken with Rosemary

Reviewed: Mar. 4, 2007
I gave this 5 stars, but actually I really used a lot of tips from these reviews. I rubbed the outside with olive oil/black pepper/garlic powder/rosemary and I stuffed the cavity with lemon, onion, garlic, and rosemary sprigs. Delicious! The leftover chicken can be used for chicken soup(see Quick and Easy Chicken Noodle Soup) or casserole. I'm so glad I tried this recipe! I also want to point out that I made it without salt, and it was still amazing, so it's perfect to make for those who are on a low sodium diet.

Original Irish Cream

Reviewed: Mar. 4, 2007
Made this for Christmas dinner as a dessert drink. Thoroughly enjoyed it. The ingredients cost about half what the store bought costs. Will definitely make again.

Green Bean Casserole I

Reviewed: Mar. 4, 2007
Let's be real. This is just average. If you like average, salty, fattening veggies, this is for you. Even for special occasions, we can do better than this. I guess for me this one is just not worth the calories and the artificial ingredients are probably worse than the fat content. Does anyone know how to make this with natural ingredients?

Delicious Ham and Potato Soup

Reviewed: Mar. 4, 2007
So good. I skipped peeling the potatoes (used red) and substituted carrots for the celery. I also cut the butter in half and didn't miss it. Even with 1% milk it came out thick and delicious. Yum!

Pasta Siciliano

Reviewed: Mar. 4, 2007
This was very good, but you have to like sun-dried tomatoes. For those of us who don't, I'm not sure what could replace them in this recipe to make it 5 stars. Anyone?

Pork Chops to Live For

Reviewed: May 22, 2007
I used olive oil rather than shortening. I only had one can of soup, and it was cream of broccoli. One can was plenty for our tastes and probably cut the sodium in this dish by 1/2. It was very good. 4.5 stars. If you have the time after work, I would make "Baked Pork Chops I" instead. It's basically the same recipe, but you bake the pork chops for about an hour instead.
